Sausage and Vegetable Stir-fry (Ssoya Bokkeum)
My Ultimate Favorite Side Dish: The Golden Recipe for Ssoya Bokkeum
Create a truly delicious sausage and vegetable stir-fry with simple seasonings.
Main Ingredients- Round sausages 1.5 cups (approx. 200g)
- 1/2 onion
- 1/4 red bell pepper
- 1/4 yellow bell pepper
- 1/4 green bell pepper
- Approx. 10g butter
- 0.5 Tbsp minced garlic
Sauce- 3 Tbsp ketchup
- 2 Tbsp sweet chili sauce
- Black pepper
- Sesame seeds
- 3 Tbsp ketchup
- 2 Tbsp sweet chili sauce
- Black pepper
- Sesame seeds
Cooking Instructions
Step 1
First, prepare the vegetables. Slice the onion into thick strips or dice it. Remove the seeds from the red bell pepper, yellow bell pepper, and green bell pepper, then chop them into similarly sized, chunky pieces. Cutting them into larger pieces like this will ensure they retain a good texture and look appealing after stir-frying.
Step 2
Slice the sausages into bite-sized pieces, about 1cm thick. If sliced too thinly, they might break apart during cooking, so slightly thicker slices are recommended for a better texture.
Step 3
Place the sliced sausages into boiling water and blanch for about 1 minute. Once it comes to a boil, immediately remove them, rinse quickly under cold water to remove any impurities, and drain thoroughly in a colander. This blanching step helps to remove excess oil from the sausages and gives them a firmer, more satisfying bite.
Step 4
Heat a pan over medium heat and melt about 10g of butter. Add the blanched sausages (make sure they are well-drained) and stir-fry until they are lightly browned and slightly golden. The butter will add a wonderful aroma and enhance the flavor of the sausages. Once the sausages are slightly golden, push them to one side of the pan.
Step 5
In the same pan where the sausages were cooked, add 0.5 Tbsp of minced garlic over low heat. Sauté until the garlic becomes fragrant. Then, add the thickly sliced onion and stir-fry briefly until it becomes translucent. The garlic’s aroma will infuse into the onions, adding another layer of flavor.
Step 6
Now, add the chopped red bell pepper, yellow bell pepper, and green bell pepper to the pan. Mix everything together and stir-fry for a short while until the vegetables are just slightly tender but still retain a pleasant crispness. Stir-frying them just enough to soften them is key to preserving their crunchy texture.
Step 7
Pour the prepared sauce ingredients into the pan: 3 Tbsp of ketchup and 2 Tbsp of sweet chili sauce. This combination creates a delightful balance of sweetness that even children will love, with a hint of mild spice.
Step 8
Stir-fry everything briskly for about 1 minute to ensure the sauce evenly coats all the ingredients. Once the sauce has slightly thickened and glazed the ingredients, sprinkle with a little black pepper and sesame seeds to finish. Your delicious Ssoya Bokkeum is ready! Serve it over a bowl of warm rice for a delightful meal, or enjoy it as a fantastic appetizer with a cold drink. Enjoy your cooking!
