Main Ingredients- 1-2 Sausages
- 1/4 Cabbage
- 1/2 Eggplant
- 1-2 Eggs
- 1-2 Bowls of cooked rice
Cooking Instructions
Step 1
First, blanch the sausages in boiling water for about 2-3 minutes to remove any impurities. Then, slice them into bite-sized pieces and score them with a knife. Cut the eggplant into roughly 0.5-1 cm thick slices, and tear or roughly chop the cabbage. Having your ingredients prepped like this makes the cooking process much smoother.
Step 2
Heat a skillet over medium heat and add a generous amount of cooking oil. Add the sliced eggplant first and pan-fry until golden brown and slightly tender. Eggplant tends to absorb oil, so cooking it slowly over medium-low heat will result in a softer and more delicious texture.
Step 3
Once the eggplant is partially cooked, add the prepared sausages and cabbage to the skillet. Season lightly with salt and pepper. Reduce the heat to low, cover the pan with a lid, and let it cook for about 3-5 minutes, allowing the vegetables to soften. This steaming process will enhance the natural sweetness of the vegetables, making them even more flavorful.
Step 4
When the vegetables are tender, pour the beaten eggs over them and cover the pan again. Cook over low heat until the eggs are set and cooked through, creating a soft and delicious layer. Be careful not to overcook the eggs, which can make them dry.
Step 5
In a separate bowl, scoop out the warm cooked rice. Add 1-2 tablespoons of soy sauce (or seasoned soy sauce) and mix well until the rice is evenly coated. For an extra layer of flavor, consider using the brine from pickled garlic or onions, or even some braised meat sauce (jorim gan장), which will add a subtle yet rich umami taste to your rice. Adjust the amount of soy sauce to your preference.
Step 6
Finally, generously top the seasoned rice with the cooked sausage, vegetables, and the soft, cooked eggs. Present it beautifully, and your delicious Sausage and Cabbage Rice Bowl is ready! Enjoy watching your child happily finish every last bite.
