Main Ingredients

  • 300g Sweet Potatoes (approx. 1.5 medium)
  • 1/2 Onion (small size)
  • 1/4 Red Bell Pepper
  • 1/4 Yellow Bell Pepper
  • Approx. 3-4 Tbsp Corn Kernels (canned)
  • 50ml Milk (approx. 4 Tbsp)
  • 1 slice Cheddar Cheese
  • Generous amount of Mozzarella Cheese (approx. 50-70g)

Seasoning & Others

  • 1 Tbsp Honey
  • Pinch of Cooking Oil (or Olive Oil)
  • Pinch of Parsley Flakes (optional)

Cooking Instructions

Step 1

Wash the sweet potatoes thoroughly, leaving the skin on. Place them in a microwave-safe dish, cover with plastic wrap, poke a few holes with a fork, and microwave for 5 minutes until softened. (Cooking time may vary depending on the sweet potato size and microwave power.)

Step 1

Step 2

Finely dice the onion and the red and yellow bell peppers into pieces similar in size to the corn kernels. Using colorful bell peppers will make the dish visually appealing.

Step 2

Step 3

Once the sweet potatoes are cooked and warm, peel them and mash them thoroughly with a fork or a potato masher until smooth and lump-free. Add 50ml of milk to the mashed sweet potatoes and mix well to create a moist and creamy sweet potato puree.

Step 3

Step 4

Add 1 tablespoon of honey to the mashed sweet potato puree and mix evenly to enhance the sweetness. You can also use corn syrup instead of honey.

Step 4

Step 5

Spread the sweetened sweet potato puree thinly at the bottom of an oven-safe dish or gratin dish. Ensure an even layer so it blends well with the cheese later.

Step 5

Step 6

Heat a pan over medium-low heat with a splash of cooking oil. Sauté the diced onion until translucent to release its aroma. Once the onion is softened, increase the heat to high and quickly stir-fry the bell peppers until they are tender-crisp. (Be careful not to overcook the vegetables until they become mushy.)

Step 6

Step 7

Evenly sprinkle the sautéed vegetables and corn kernels over the sweet potato puree spread in the dish. The colorful vegetables will add a delightful visual touch.

Step 7

Step 8

Generously top with mozzarella cheese according to your preference. Tear the cheddar cheese into small pieces and scatter them over the mozzarella for added flavor. Finally, sprinkle with parsley flakes for a more appetizing presentation.

Step 8

Step 9

Bake in a preheated oven at 200°C (390°F) for 10 to 15 minutes, or until the cheese is golden brown and melted, and the gratin is heated through. Adjust baking time based on your oven’s performance. Your delicious sweet potato gratin is ready! Enjoy it while it’s warm.
