Main Ingredients

  • 1 serving fresh Sanuki udon noodles
  • 2-3 stalks green onions
  • Katsuobushi (flakes or powder) to taste
  • Katsuobushi broth (using tea bags or dashi packs)

Cooking Instructions

Step 1

The udon noodles used in this recipe are special Sanuki udon, personally sourced from Takamatsu. These noodles are characterized by their thick, chewy texture, embodying the craftsmanship of the Sanuki region.

Step 1

Step 2

Bring a generous amount of water to a rolling boil in a large pot. Once boiling, carefully add the fresh udon noodles. Gently loosen the noodles with chopsticks to prevent sticking, and boil for approximately 15 minutes. (Adjust boiling time based on noodle thickness and brand. For a firmer, chewier texture, stick to 15 minutes. For a softer texture, you can boil slightly longer.)

Step 2

Step 3

Immediately after boiling, quickly rinse the udon noodles under cold running water to cool them down. This step enhances the chewiness of the noodles and prevents them from clumping together. Once rinsed, drain the noodles thoroughly in a colander. Leaving excess water can dilute the broth and make the udon taste bland.

Step 3

Step 4

In a serving bowl, place the katsuobushi broth tea bag and pour hot water over it to steep a rich broth. (Alternatively, you can use pre-made udon soup base.) Once the broth is ready, carefully place the drained, boiled udon noodles into the broth. Generously top with finely chopped fresh green onions, savory shredded seaweed, and fluffy katsuobushi flakes or powder to your liking. Your delicious Sanuki Udon is now ready to be enjoyed! Serve immediately while warm for the best experience.
