Main Ingredients- Salted mackerel 1.5 fish (rinsed and cut into serving pieces)
- Radish 1/2 medium (approx. 300g, cut into 1.5-2cm thick rounds)
- Broth (anchovy-kelp or rice water) 500ml
Cooking Instructions
Step 1
Today, we’re making ‘Salted Mackerel and Radish Stew,’ a dish that’s often called a ‘rice thief’ because it’s so addictive! The salty mackerel and refreshing radish come together for a fantastic flavor. Shall we get started?
Step 2
First, let’s prepare the star of our dish – the seasoning sauce. In 500ml of broth (using anchovy-kelp broth or rice water will enhance the flavor), add 1 Tbsp of gochugaru, 2 Tbsp of soy sauce, 1 tsp of sugar, and 1 tsp of minced garlic. Whisk everything together until well combined. Finally, add the roughly chopped green onions to the sauce. Your seasoning is now ready!
Step 3
Now, place the radish slices, cut into about 1.5-2cm thick rounds, at the bottom of a pot. The radish will absorb all the delicious flavors as it cooks! Next, artfully arrange the cleaned and cut salted mackerel pieces on top of the radish.
Step 4
Pour the prepared seasoning sauce evenly over the mackerel and radish. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low, cover the pot, and let it simmer gently for about 15-20 minutes. Spooning some of the sauce over the ingredients periodically will help the flavors meld beautifully.
