This recipe is designed for simplicity, requiring no complex ingredients or cooking processes, making it accessible to everyone. The Salmon Oven Rice stands out by baking cooked rice in the oven, further enhancing the soft and chewy texture characteristic of Kawaji No. 1 rice.

Ingredients (Serves 1)

  • 1 cup Kawaji No. 1 rice
  • 1 piece salmon
  • 4 Tbsp soy sauce
  • 1 Tbsp peas
  • 1 pinch dried seaweed flakes
  • 1 pinch ginger powder

Cooking Instructions

Step 1

Wash the Kawaji No. 1 rice and soak it in water for 1 to 2 hours. If you’re short on time, you can cook it immediately after washing.

Cut the salmon into bite-sized pieces, about 1 to 1.5 cm thick.

Transfer the soaked rice to a pot. Add water so that the water level is about 0.5 to 0.7 cm above the surface of the rice. Cook over medium heat for about 25 minutes.

Transfer the cooked rice to a bowl. Add 4 tablespoons of soy sauce and mix gently with chopsticks until the soy sauce is evenly distributed.

Add the peas to the seasoned rice and mix once more.

Transfer the prepared rice into a foil lunch box or an oven-safe dish. Arrange the salmon pieces on top of the rice without overlapping.

Bake in a preheated oven at 180°C for 10 minutes.

Right after cooking, its unique sweetness lingered in my mouth, and even after cooling, the chewy texture and stickiness remained. It was fascinating how this rice, despite its high stickiness, didn’t clump together when cooked.

Kawaji No. 1 rice truly shone in dishes like fried rice and kimbap. If you have a dish that requires lasting chewiness, a sticky texture, and a touch of sweetness, I highly recommend this rice.
