  • 1/2 large green onion (scallion)
  • 1 liter water
  • 125ml milk
  • 125ml heavy cream (optional, can be substituted with more milk)
  • 4 slices cheddar cheese
  • 30g butter
  • 2 Tbsp grated Parmesan cheese

First, pour 1 liter of water into a spacious pot and bring it to a boil over high heat. This will be the base for your soup.

Wash the potatoes thoroughly and thinly slice them without peeling. Cooking them with the skins on retains nutrients and adds a more robust, nutty flavor.

Finely chop the green onion. Chef Ryusuyeong used about half a stalk, but if you prefer a more pronounced aroma, feel free to use a full stalk. The fragrance of the green onion will enhance the soup’s overall flavor profile.
