I tried making Jeyuk Bokkeum using Chef Ryu Soo-young’s recipe from the TV show ‘Pyeonstorang.’ It’s incredibly delicious thanks to the secret ingredient, vinegar, which eliminates the pork’s gamey smell and adds tenderness and umami. Enjoy this fantastic Jeyuk Bokkeum at home!
Main Ingredients
- Pork shoulder 600g
- Pear juice drink (bottled) 1 can (340ml)
- Gochujang (Korean chili paste) 3 Tbsp
- Soy sauce 2 Tbsp
- Sugar 2 Tbsp
- Vinegar 2 Tbsp
- Cooking wine (Mirin or similar) 2 Tbsp
- Sesame oil 1 Tbsp
- Minced garlic 1 Tbsp
- Sesame seeds, a pinch

- Green onion 1 stalk

Cooking Instructions
Step 1
First, prepare all the ingredients needed for the recipe. For the pork shoulder, lightly press it with paper towels to remove excess blood for a cleaner taste.

In a large bowl, combine all the marinade ingredients: gochujang, soy sauce, sugar, vinegar, cooking wine, sesame oil, and 1 Tbsp of minced garlic. Mix them well to create the sauce. The pear juice drink is key to tenderizing the pork and adding sweetness and flavor.

Using paper towels, thoroughly pat dry the pork to remove any remaining blood. This step helps reduce any gamey smell and allows the marinade to penetrate better.

Add the patted-dry pork to the prepared marinade. Gently mix with your hands, ensuring every piece of pork is coated evenly with the sauce. Allow the marinade to soak into the meat.

Transfer the marinated pork to an airtight container and refrigerate for at least 3 hours to marinate. While you can cook it immediately if short on time, marinating makes the pork significantly more tender and the flavors much deeper. Once the pork is partially cooked and the liquid has reduced, add the sliced onions, green onions, an additional 1 Tbsp of minced garlic, and a pinch of black pepper.
