Effortless Radish Dish: Ryu Soo-young’s Easy Radish Pancake Recipe
Experience the freshness of radish with this incredibly simple radish dish. Let’s make Ryu Soo-young’s easy radish pancakes!
Ingredients- 800g Daikon Radish
- 1.5 cups Pancake Mix (using standard measuring cups)
- 1-2 tsp Salt
- Vegetable Oil, for frying
Cooking Instructions
Step 1
First, prepare 800g of daikon radish. Using a mandoline slicer or a julienne peeler will make shredding it quickly and thinly much easier. While the thickness is up to your preference, cutting it too thick might increase the cooking time, so aim for a medium shred.
Step 2
Place all the shredded radish into a large mixing bowl. This will help ensure the seasonings are evenly distributed.
Step 3
Add 1-2 teaspoons of salt and mix well. Since pancake mix usually contains salt, it’s a good idea to start with just 1 teaspoon of salt and taste before adding more. If you’re using all-purpose flour instead of pancake mix, you might want to use about 2 teaspoons of salt.
Step 4
Now, add 1.5 cups of pancake mix (or all-purpose flour, measured with a standard cup) and mix everything together gently. The key here is not to make a thick batter, but rather to coat the radish shreds. Mix just enough so that the flour lightly coats the radish, helping it bind together. Overmixing can make the pancakes gummy.
Step 5
When you pick up a clump of the radish mixture, it should hold together slightly, but you shouldn’t see a lot of excess flour batter. The goal is to let the natural flavor of the radish shine through.
Step 6
Heat a frying pan over medium-low heat and add a generous amount of vegetable oil. Using enough oil is crucial for achieving a crispy texture. Maintaining a medium-low heat is important to ensure the pancakes cook through evenly without burning.
Step 7
Add portions of the radish mixture to the hot pan, shaping them to your desired thickness. Thin pancakes will be extra crispy, while thicker ones offer a contrast of a crispy exterior with a moist interior. I personally prefer them a bit thicker for a satisfying bite. Adjust the thickness to your liking. Keep the heat on medium-low and let the pancakes cook until they turn a nice golden brown, flipping occasionally. Patience is key for the best results!
Step 8
When you notice the top surface of the pancake starting to look a bit dry, it’s time to flip it. If the first side looks lightly golden, flip it over. For an even crispier result, you can wait until the first side is a deeper golden brown before flipping.
Step 9
With a bit of patience and care, you’ll achieve beautifully golden-brown radish pancakes, crispy on the outside and tender on the inside! This recipe is wonderfully simple, using minimal ingredients and a straightforward process, making it perfect for anyone to try. Enjoy your delicious radish pancakes!
