This dish features a simple yet deeply flavorful soy-garlic sauce that makes chicken wings tender and delicious. It’s perfect as a snack for kids or a tasty appetizer for adults. The chicken is cooked to be slightly seared on the outside and juicy on the inside, complemented by a rich garlic aroma for an unforgettable taste.
Main Ingredients- 24 Chicken Wings (approx. 600g)
- 2 stalks Green Onions
- 15 cloves Garlic
- 1 slice Ginger (optional, for enhanced flavor)
Golden Sauce- 1 Tbsp Sugar
- 2 Tbsp Soy Sauce
- 1 Tbsp Oyster Sauce
- 4 Tbsp Oligodang (or corn syrup)
- 1/2 Tbsp Sesame Seeds
- 1 Tbsp Sugar

Cooking Instructions
Step 1
First, wash the chicken wings thoroughly under running water. Rinse them well to ensure there is no blood or impurities.
Step 2
Make about 2-3 cuts on both sides of each washed chicken wing with a knife. These cuts help the sauce penetrate deeply into the meat, ensuring it cooks evenly and stays tender.
Step 3
Peel and thinly slice 1 piece of ginger. Ginger helps to eliminate any unwanted odor from the chicken and adds a pleasant aroma. (Optional)
Step 4
Wash the 2 green onion stalks and slice them diagonally into about 4-5 cm lengths. They add great flavor when sautéed with garlic.
Step 5
Prepare about 15 whole garlic cloves. Feel free to add more if you love garlic. Whole cloves become sweet and flavorful as they cook.
Step 6
Place the prepared chicken wings in a dry pan without preheating it, ensuring they don’t overlap. Cover with a lid and cook over high heat for about 3 minutes. Since the chicken releases its own fat, you don’t need to add any cooking oil.
Step 7
After 3 minutes, flip the chicken wings over. Cooking on high heat melts the chicken fat, browning the wings and starting to make the skin slightly crispy. Keep an eye on them to prevent burning, depending on your stove’s heat distribution.
Step 8
Cover the flipped chicken wings again with the lid and cook for another 3 minutes, this time over medium heat. This process helps cook the inside gently while maintaining a nice texture on the outside.

Add the sliced ginger and continue to cook over medium heat for about 15 minutes. To ensure even cooking and prevent sticking, stir the chicken wings and ginger occasionally, scraping the bottom of the pan.
Step 10
After about 15 minutes of cooking, a good amount of chicken fat will have accumulated in the pan. Using this rendered fat to sauté the garlic and green onions will infuse them with flavor. If you find it too oily, you can carefully wipe some of the excess fat away with a paper towel.

Now, add the sliced green onions and whole garlic cloves to the pan with the chicken wings and mix them all together.

First, add 1 tablespoon of sugar and mix it evenly with the ingredients. Adding sugar at this stage is said to help it penetrate the meat, making the Galbi Chicken even more delicious.

Once you mix in the sugar, you’ll notice that the accumulated fat in the pan is absorbed by the green onions and garlic, almost disappearing. The ingredients are now starting to meld together harmoniously.
Step 14
Push the chicken and vegetables to one side of the pan. Pour 2 tablespoons of soy sauce into the cleared space and let it bubble slightly before mixing everything together. This step helps to enhance the savory flavor of the soy sauce.
Step 15
Add 1 tablespoon of oyster sauce and 4 tablespoons of oligodang (or corn syrup). Stir everything well to coat the chicken wings evenly with the sauce and let it simmer.

Continue to cook until the sauce thickens and coats the chicken wings beautifully. Ryu Soo-young mentioned completing this in 25 minutes, and indeed, the cooking time is short and allows for an impressive chicken dish to be made quickly. (Total cooking time approx. 25-30 minutes).
