Essential Ingredients- 10 fresh perilla leaves
- 1 cup pancake mix (buchim garu)
- 1 cup + 2 Tbsp cold water
- 3 pinches of fine salt
- Generous amount of cooking oil (for pan-frying)
Cooking Instructions
Step 1
First, wash the perilla leaves thoroughly under running water. It’s crucial to pat them completely dry with paper towels or a clean cloth. Ensuring there’s no moisture will prevent the batter from separating and help the pancakes cook up nice and crispy. You can leave the stems on; they actually make it easier to flip the pancakes later.
Step 2
In a bowl, combine 1 cup of pancake mix, 1 cup plus 2 tablespoons of cold water, and 3 pinches of fine salt. Whisk them together with a whisk or chopsticks until well combined. The batter should have a consistency similar to plain yogurt – not too thin, not too thick. Don’t worry if there are a few small lumps of dry pancake mix remaining; they will naturally dissolve as you cook.
Step 3
Now, preheat your pan over medium heat. Pour in enough cooking oil so the perilla leaves can be mostly submerged when fried. Once the oil is sufficiently hot, reduce the heat slightly to medium. Gently coat each perilla leaf with the batter, ensuring a thin, even layer. Carefully place the battered leaves into the hot oil. Fry for about 1 minute and 30 seconds per side, for a total of 3 minutes, until golden brown and crispy. It’s best to avoid flipping them too much during cooking. For an extra flavor boost, you can try dipping the finished pancakes in a little seasoned salt (mat-so-geum).
