Zucchini Noodle Ingredients

  • 1 Zucchini (for noodles)
  • 1 Egg
  • 1/3 Carrot
  • 1/3 Small Zucchini (for garnish)
  • 2-3 Dried Shiitake Mushrooms
  • Piece of Dried Kelp (optional)
  • 4 Cups Water (for broth)
  • 2 Tbsp Fish Sauce
  • A little Cooking Oil
  • A little Salt
  • A little Toasted Sesame Seeds

Cooking Instructions

For the zucchini noodles, halve the large zucchini and thoroughly scrape out the seeds with a spoon. (Removing the seeds is essential for creating noodle-like strands.)

Place the deseeded zucchini in a pot, cover it with enough water to submerge, and boil for about 20 minutes until it becomes very soft and tender. It’s crucial to cook the zucchini until it’s completely done and mushy.

Prepare the toppings. Lightly beat the egg with a pinch of salt, then heat a little cooking oil in a pan and cook thin omelets. Once cooked, roll up the omelets and thinly slice them into shreds. Wash and julienne the carrot and small zucchini.

Lightly stir-fry the julienned carrots and small zucchini in separate pans with a little cooking oil and a pinch of salt. Avoid overcooking to maintain a crisp texture.

Make the broth. Pour 4 cups of water into a pot and add the rehydrated dried shiitake mushrooms (or use concentrated broth cubes) and a piece of kelp (optional). Bring to a boil, then remove the kelp. Simmer over low heat for about 10 more minutes to develop a deep flavor. Season with 2 tablespoons of fish sauce and a little salt to your taste.
