Main Ingredients

  • 400-500g Round Zucchini
  • 1 Onion
  • 3 Korean Green Chilies (Cheongyang peppers)
  • 1 Scallion

Seasoning & Others

  • 3-4 Tbsp Sunflower Oil
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Salted Shrimp (fermented shrimp)
  • 150ml Water
  • 1.5 Tbsp Sesame Oil or Perilla Oil
  • Pinch of Toasted Sesame Seeds

Cooking Instructions

Step 1

Cut the large round zucchini and remove the seedy core in the center. While it’s perfectly fine to eat with the seeds, removing them can make the stew look cleaner, especially if children are sensitive to it. (You can leave the seeds in if you prefer.)

Dice the prepared round zucchini into bite-sized cubes. Cutting them to a size that blends well with the broth is important for a balanced stew.

Slice the onion into pieces similar in size to the zucchini cubes. Finely chop the Korean green chilies to add a pleasant spiciness. (Adjust the amount of chilies according to your preference for heat.)

Finely chop the scallion. In a frying pan, combine the chopped scallion, sunflower oil, and minced garlic. Sauté for about 30 seconds until fragrant. Be careful not to burn the garlic as you stir-fry.

Add the diced round zucchini to the sautéed aromatics and mix well. Stir in 1 tablespoon of salted shrimp and stir-fry over high heat for about 2-3 minutes. The salted shrimp will enhance the umami flavor of the zucchini.

Add the sliced onion and chopped green chilies, and sauté for another 1-2 minutes. The vegetables will soften slightly, adding sweetness and depth to the flavor.

Pour in 150ml of water, reduce the heat to medium, and simmer for about 7-8 minutes. The key is to cook the round zucchini until it’s tender but not mushy. (If using regular, elongated zucchini, reduce the cooking time by half.)

Just before turning off the heat, drizzle in 1.5 tablespoons of sesame oil or perilla oil and sprinkle with toasted sesame seeds for a delicious round zucchini stew! I used perilla oil for its nutty aroma. If the salted shrimp isn’t salty enough for your taste, add a pinch of salt to adjust. I seasoned it to be slightly savory, perfect for mixing with rice.
