Cooking Instructions
Step 1
First, thinly slice half an onion into 5mm thick strips. Prepare the green onion by slicing it diagonally into 5mm thick pieces, about 15cm long. This will help release its fresh aroma as it cooks.
Step 2
Gently heat a stew pot over medium-low heat. Add 2 Tbsp of sesame oil and reduce the heat to low. Add 1 Tbsp of minced garlic and 2 Tbsp of gochugaru, stirring constantly until fragrant. Cooking the garlic and chili flakes on low heat prevents burning and develops a deeper flavor.
Step 3
Once you can smell the fragrant, spicy aroma, increase the heat to medium and add 100g of ground pork. Stir-fry the pork, ensuring it doesn’t stick to the bottom, until it’s fully cooked through and lightly browned. Make sure to cook the pork thoroughly before proceeding.
Step 4
When the pork is almost cooked, pour in 300ml of water and stir well. Dissolve 1 Tbsp of gochujang and 100ml of tomato sauce into the liquid, ensuring there are no lumps. The tomato sauce is essential for achieving that classic rosé flavor.
Step 5
Add all the prepared sliced onions and green onions to the pot. Once the broth comes to a rolling boil, gently break the block of soft tofu into bite-sized pieces directly into the stew. Let it simmer over medium heat for 3-5 minutes, allowing the tofu to absorb the flavors of the broth.
Step 6
Finally, pour in 500ml of heavy cream and stir gently to combine with the broth. Simmer for about 3 more minutes over medium-low heat, allowing the rosé sauce to thicken slightly. Taste and season with 1 tsp of salt and 1 tsp of black pepper, or adjust to your liking. Your delicious Rosé Soft Tofu Stew is ready to be enjoyed! It’s best served hot.
