Dough Ingredients

  • 100g cake flour (low-gluten flour)
  • 60g cold butter, cubed
  • 80g sugar
  • 1g salt
  • 20g ice water

First, wash the apple thoroughly, remove the core, and then thinly slice it, much like delicate flower petals. (Tip: Slicing them very thinly is the secret to creating a beautiful rose shape for your pie. Try slicing them even thinner than you think you need!)

Place the thinly sliced apple pieces into a bowl. Add 80g of sugar and 3 pinches of cinnamon powder, then toss gently to coat the apples evenly. Let them marinate for about 10 minutes until the apples soften slightly and release some of their juice.

Sift the 100g of cake flour into a bowl at least twice. Sifting the flour will help create a more tender and delicate dough.

Add the 60g of cold butter, cut into cubes, on top of the sifted flour. Using a bench scraper or spatula, quickly cut the butter into the flour until the mixture resembles coarse crumbs, with pieces of butter about the size of small peas. Be careful not to let the butter melt from the warmth of your hands.

Add the 1g of salt and 20g of ice water. Use your spatula to cut and mix the ingredients until they just start to come together into a rough ball of dough. Avoid overmixing.

Wrap the dough tightly in plastic wrap and refrigerate for 20 minutes to rest. This chilling period allows the gluten to relax, making the dough easier to handle.

Remove the chilled dough from the refrigerator. Lightly dust your work surface with a little flour, then use a rolling pin to roll out the dough into a wide and thin sheet. (Tip: Place a sheet of plastic wrap over the dough before rolling to prevent it from sticking to the rolling pin!)

Using a knife, cut the rolled-out dough into uniform strips, about 2cm wide. Think of them as being similar in shape to popsicle sticks.

Arrange the marinated apple slices along one edge of each dough strip, overlapping them slightly. Gently fold up the bottom edge of the dough strip over the apples, then carefully roll the strip up from one end to create a rose shape. Overlap the apples so they resemble petals, and slightly curl the dough edge to enhance the flower effect.

Lightly grease your muffin tin or pie mold with cooking oil. Place the rolled apple dough into the prepared molds. Bake in a preheated oven at 200°C (390°F) for approximately 20 minutes, or until golden brown and cooked through. The beautiful Rose Apple Pie is now complete!
