Rich Soybean Milk Jeon: A Delicious Savory Pancake with [Jeongseapoom Soybean Milk]
This savory pancake, made with the rich soybean milk from Jeongseapoom, is wonderfully soft and flavorful due to its thinner batter. As it cooks, it releases an aroma reminiscent of mung bean pancakes (nokdujeon), which is truly delightful, even for those who haven’t had nokdujeon in a while. The combination of tender ground pork, kimchi, mushrooms, and green peppers creates a satisfying texture and a burst of flavor in every bite. Enjoy this easy yet incredibly delicious pancake!
Pancake Batter Ingredients- 1.5 cups (300ml) Jeongseapoom Rich Soybean Milk
- 5 Tbsp All-purpose flour
- 5 Tbsp Pancake mix
- 1 Tbsp Minced garlic
- Pinch of salt
- Pinch of black pepper
- A drizzle of sesame oil
Filling Ingredients- 100g Ground pork
- 1/2 cup Chopped red kimchi (or regular kimchi)
- 1/2 King oyster mushroom, finely chopped
- 2 Green chilies, seeded and finely chopped
- 2 Tbsp Red chili powder
- 100g Ground pork
- 1/2 cup Chopped red kimchi (or regular kimchi)
- 1/2 King oyster mushroom, finely chopped
- 2 Green chilies, seeded and finely chopped
- 2 Tbsp Red chili powder
Cooking Instructions
Step 1
First, prepare the filling. In a bowl, combine the ground pork with a pinch of salt, a pinch of black pepper, 1 Tbsp minced garlic, and a drizzle of sesame oil. Mix well by hand to marinate the pork. This step helps remove any gamey odors and enhances the flavor.
Step 2
Now, let’s make the pancake batter. In a large bowl, add 5 Tbsp of all-purpose flour and 5 Tbsp of pancake mix. Using pancake mix along with flour will result in a crispier and more delicious pancake.
Step 3
Pour in the Jeongseapoom Rich Soybean Milk, about 1.5 cups (300ml). Make sure to include the thicker part that settles at the bottom of the container, as this is where the rich flavor is concentrated. The deep soybean flavor will significantly enhance the pancake’s taste.
Step 4
Gradually whisk or stir the flour and pancake mix into the soybean milk, ensuring no lumps form. Aim for a smooth batter consistency. Don’t worry if the batter seems quite thin; a thinner batter will actually make the pancake softer and more tender.
Step 5
Add the marinated ground pork to the batter and mix everything together.
Step 6
Add the finely chopped red kimchi (or regular kimchi), chopped about 2-3 times with scissors, to the batter. If you have kimchi, definitely include it, as its tanginess adds a wonderful depth of flavor.
Step 7
Finely chop half of the king oyster mushroom and the seeded green chilies, then add them to the batter. Incorporating these vegetables adds texture and visual appeal, making the pancake even more enjoyable.
Step 8
Finally, stir in 2 Tbsp of red chili powder and mix well. The chili powder will give the pancake a beautiful reddish hue and a subtle hint of spice.
Step 9
Time to cook! Heat a generous amount of cooking oil in a pan (a wok is ideal for easier shaping) over medium heat. Scoop generous spoonfuls of the batter and drop them into the hot oil. Since the batter is thin, it’s best to let it spread and cook rather than trying to force a perfect shape.
Step 10
Ensure the filling ingredients (pork, kimchi, mushrooms, chilies) are placed towards the center of each pancake portion. This helps prevent them from falling out when you flip the pancake, keeping its shape intact. Avoid putting too many ingredients near the edges.
Step 11
When the edges of the pancake start to turn golden brown, it’s time to flip. Carefully slide a spatula deep underneath the pancake, lifting the bottom batter, and use a spoon to support the top part as you flip it over. (Tip: The edges turning brown is a sign it’s ready to be flipped.)
Step 12
To prevent the pancake from breaking, avoid flipping it too often. Reduce the heat to low and cook for a few minutes on each side until both sides are golden brown and crispy, and the inside is fully cooked. Enjoy your delicious, rich soybean milk savory pancake!
