Ingredients

  • Mixed seafood 1 handful (thawed)
  • Cocktail shrimp or Pacific white shrimp 5-7 pcs
  • Squid 1/2
  • Garlic 5 cloves
  • Shiitake mushroom 1
  • Cherry tomatoes 4-5 pcs
  • Cabbage 200g
  • Carrot 40g
  • White part of green onion a little
  • White wine 1 Tbsp
  • Butter 1 Tbsp
  • Dried red chili peppers (peperoncino) 5 pcs
  • Salt 1-2 pinches
  • Whole black pepper a little
  • Chicken stock 1 Tbsp
  • Olive oil to taste
  • Whipping cream 250ml
  • Milk 400ml
  • Pasta water 200ml
  • Pasta noodles 1 serving
  • Parsley for garnish
  • Parmigiano-Reggiano cheese 2 Tbsp (grated)

Cooking Instructions

Step 1

Let’s start by prepping the ingredients! For frozen seafood, thawing it in cold water speeds up the process. Clean and prepare the fresh seafood as well. Chop the vegetables into bite-sized pieces. Thinly slice the garlic and finely chop the white part of the green onion. Crush the dried chili peppers to prepare them for adding a touch of heat.

Heat a generous amount of olive oil in a wide pan over medium heat. Once the pan is warm, add the sliced garlic and chopped green onion and sauté until fragrant. This builds the aromatic base for the dish.

As the garlic and green onion become fragrant, add the carrots and stir-fry briefly. Then, add the cabbage and sauté until it just begins to soften. The vegetables will release their natural sweetness as they cook.

Meanwhile, bring a pot of generously salted water to a boil and cook the pasta noodles. Here’s a crucial tip: cook the pasta about 1-2 minutes less than the package instructions, aiming for an ‘al dente’ texture. This is because the pasta will continue to cook and absorb flavors when combined with the sauce later.

Once the vegetables are partially cooked, add all the prepared seafood to the pan. Pour in 1 Tbsp of white wine and stir-fry over high heat for about 5 minutes, tossing the ingredients. This technique, called flambéing, helps to cook off the alcohol while infusing the seafood with flavor. Season with a little whole black pepper as you stir-fry for added aroma.

As the shrimp turn a lovely pink and cook through, pour in 200ml of milk and bring it to a simmer. Once simmering, add 1 Tbsp of butter and stir until melted and incorporated. Now, add the pre-cooked pasta noodles and the cherry tomatoes. Stir everything together, allowing the sauce to coat the pasta and the flavors to meld. The slight tanginess of the cherry tomatoes adds a wonderful complexity to the creamy sauce.

Next, add the shiitake mushrooms and 1 Tbsp of chicken stock for an extra boost of umami. Now, pour in the rich whipping cream (250ml). (Tip: Many find imported whipping creams to be richer and more flavorful than domestic ones, so feel free to experiment!) Use the reserved pasta water (about 200ml) to adjust the sauce to your desired consistency, adding it gradually. Finally, season with salt to taste, and stir in 2 Tbsp of grated Parmigiano-Reggiano cheese until melted. A sprinkle of fresh parsley makes for a beautiful finish.
