Ingredients

  • 1 packet Naturally Dream Cheonggukjang Seasoning
  • 1/4 head of Kimchi
  • 1/2 block of Tofu
  • 1/3 stalk of Green Onion
  • 1 Korean Red Chili Pepper (Cheongyang pepper)
  • 1 Tbsp Minced Garlic
  • 1 Shiitake Mushroom (or other mushrooms)
  • 350-500ml Rice Water

Cooking Instructions

Combine the rice water (350-500ml) and the Natural Dream Cheonggukjang seasoning packet in a pot, stirring well to dissolve. Add the chopped kimchi (1/4 head) and simmer over medium heat for 15-20 minutes until the kimchi is thoroughly cooked and softened. It’s best to remove the excess seasoning from the kimchi before adding it to achieve a cleaner, fresher taste. Using rice water enhances the depth of flavor in the broth.

Once the kimchi has cooked sufficiently and the broth has taken on a rich color, it’s time to prepare the remaining vegetables. Cut the tofu into bite-sized cubes. Slice the green onion and Korean red chili pepper diagonally. Slice the shiitake mushroom (or any other mushrooms you are using) into manageable pieces. Having your vegetables prepped will make the cooking process much smoother.

After the kimchi is well-cooked, add the prepared green onion, chili pepper, and mushrooms to the pot. Let it simmer for another 5 minutes to allow the flavors to meld.
