Main Ingredients

  • 1 serving pasta
  • 1 piece pork jowl (about 150-200g)
  • 1 handful cabbage (about 100g)
  • 5 cloves garlic
  • 2 Korean red chili peppers (optional, for spice adjustment)
  • 1/3 onion
  • 1 white part of green onion
  • A little carrot
  • 1/5 bell pepper

Seasoning

  • 1/2 Tbsp salt (for pasta water included)
  • 1.5 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 2 Tbsp chili oil
  • 1 Tbsp sugar

Cooking Instructions

Step 1

Before you begin, prepare all your vegetables. Thinly slice the garlic. Finely chop the green onion and Korean red chili peppers. Julienne the bell pepper and carrot. Dice the cabbage and onion into bite-sized pieces.

In a large pot, bring plenty of water to a boil for the pasta. Add 1/2 Tbsp of salt to season the water. Once boiling, the pasta will be ready to cook.

Prepare your pork jowl. You can use a whole piece or pre-portioned cuts. Ensure it’s ready for cooking.

Heat a pan over medium heat without adding any oil. Place the pork jowl in the pan and cook slowly until golden brown. This method allows the natural fat of the pork jowl to render, adding a delicious richness to the dish.

Add the pasta to the boiling water and cook for about 6 minutes. Cooking times can vary depending on the pasta type, so it’s best to cook it 1-2 minutes less than the package instructions suggest. Stir the pasta occasionally to prevent it from sticking.

Once the pork jowl is about 90% cooked, cut it into bite-sized pieces (about 1cm thick). Add the chopped green onion and sliced garlic to the pan. Continue to sauté over medium heat until the garlic becomes fragrant.

When the garlic turns translucent, add all the seasoning ingredients (1.5 Tbsp soy sauce, 1 Tbsp oyster sauce, 1 Tbsp sugar). Then, add all the remaining vegetables (cabbage, onion, carrot, bell pepper, chili peppers) and stir-fry until the vegetables are slightly softened.

Drain the cooked pasta and immediately add it to the pan. Stir-fry over high heat for 1-2 minutes to combine the pasta with the sauce and vegetables. If the pasta seems too dry, add about 1 ladle of pasta water to achieve a silkier consistency. Finally, drizzle in 2 Tbsp of chili oil for extra flavor.
