  • 1/2 Onion (thinly sliced)
  • 3/4 stalk Green Onion (cut diagonally into large pieces)
  • 1 head Enoki Mushrooms (trim bottom and separate strands)
  • 1/2 block Firm Tofu (cubed into bite-sized pieces)

Jjigae Seasoning

  • 1 Tbsp Sugar (for a touch of sweetness)
  • 1 Tbsp Gochugaru (Korean chili flakes, for heat)
  • 1 Tbsp Doenjang (fermented soybean paste, for savory depth)
  • 2 Tbsp Gochujang (Korean chili paste, for sweet and spicy flavor)
  • 1 Tbsp Minced Garlic (essential for aroma)
  • 2 Tbsp Cooking Wine or Mirin (to tenderize and remove odors)
  • Pinch of Black Pepper (to enhance flavor)

Cooking Instructions

First, let’s prepare the base seasoning for our delicious Jjigae. In a small bowl, combine 1 Tbsp sugar, 1 Tbsp gochugaru, 1 Tbsp doenjang, 2 Tbsp gochujang, 1 Tbsp minced garlic, 2 Tbsp cooking wine, and a pinch of black pepper. Mix well until there are no lumps. Having this seasoning mixture ready in advance will make the cooking process much smoother.

Next, prepare the vegetables that will add wonderful texture and flavor to the Jjigae. Thinly slice the onion. Cut the green onion diagonally into large pieces. Trim the bottom of the enoki mushrooms and separate the strands. Cube the firm tofu into bite-sized pieces. These ingredients will contribute to the diverse taste and texture of the stew.

Now, it’s time to stir-fry the pork belly. Heat a pan over medium heat and add a generous amount of cooking oil. Add the 300g of pork belly, season lightly with salt and pepper, and stir-fry until the surfaces are golden brown. The rendered pork fat will add a wonderful depth of flavor.

Once the pork belly is nicely browned, add all the prepared seasoning mixture to the pan. Stir-fry briefly with the pork belly, allowing the seasoning to coat the meat evenly. This step enhances the richness of the flavor.
