Try making your own homemade cookies bursting with the aromatic flavor of peanut butter! By simply adding peanut butter to a basic cookie dough, anyone can make them easily. It’s great to make a big batch at once and enjoy them as a snack when you’re feeling peckish. We also introduce a version enhanced with almonds and cranberries for an even richer taste and texture.
Basic Ingredients- Peanut butter 50g
- All-purpose flour (chalmilgaru) 150g
- Sugar 70g
- 1 Egg (room temperature)
- 1/2 tsp Baking powder
- Butter 50g (room temperature)
Cooking Instructions
Step 1
First, take the egg out of the refrigerator about 30 minutes before you start baking to let it come to room temperature. In a bowl, combine the softened butter (at room temperature) and sugar. Whisk them together with a mixer until creamy. (Tip: You can use grapeseed oil instead of butter, but using butter will give the cookies a much richer flavor.)
Step 2
Gradually add the room-temperature egg, mixing well after each addition. Be careful to prevent the egg mixture from separating. Once fully combined, add the sifted flour and baking powder.
Step 3
Using a spatula or your hands, gently mix until no dry flour is visible. Overmixing can make the cookies tough, so mix just enough for the flour to come together. (Tip: Once you’ve mixed until no dry flour spots remain, use your fingertips to gather the dough into a ball.)
Step 4
Gather the dough into a cohesive ball, wrap it in plastic wrap, and refrigerate for at least 1 hour. Chilling the dough makes it easier to handle and helps the cookies maintain their shape when baked.
Step 5
Take the chilled dough out and divide it in half. Mix dried cranberries into one half of the dough, and leave the other half as is. This allows you to make two different flavors of cookies.
Step 6
To shape the cookies, take portions of the dough, roll them into balls, and then flatten them with a cookie cutter or your hands to create your desired shapes. (Tip: Lightly dusting with flour can prevent the dough from sticking.)

Line a baking sheet with parchment paper and place the cookie dough portions on it, leaving some space between them. Bake in a preheated oven at 170-180°C (340-350°F) for about 10-12 minutes. The cookies are done when the edges are lightly golden brown. For a darker color and deeper flavor, bake for a slightly longer time.

If making a large batch with plenty of almonds and cranberries, mix the nuts and dried fruits into the dough. (Tip: It’s better to use slightly less than you think you need, as this helps the dough come together well and makes it easier to shape.)

For easier shaping, after chilling the dough in the refrigerator, place it in a plastic bag or wrap and form it into a rectangular shape. Refrigerating for another hour will allow for cleaner cuts.
Step 10
Remove the chilled dough from the refrigerator, slice it to your desired thickness. Flatten the sliced dough pieces with your hands to form cookie shapes, place them on a baking sheet, and bake in a preheated oven at 170-180°C (340-350°F) for a little over 10 minutes.
Step 11
Once baked, let the cookies cool completely on a wire rack. They are especially delicious enjoyed with warm milk or coffee. Store any leftover cookies in an airtight container, and you can enjoy them for several days.
