Today, we’re making something a little unusual but incredibly delicious: Perilla Seed Noodles, also known as Makguksu. This dish was recently featured on the popular Korean show ‘Amazing Saturday,’ where it was highly praised by the cast, including Haetnim. I’d never tried it before, so I recreated it based on what I saw, and to my surprise, it turned out to be a unique and delightful culinary experience! This recipe is surprisingly simple yet offers a deep, satisfying flavor that will enrich your dining table.
Ingredients (for 1 serving)- 1 serving Buckwheat noodles
- 100ml Store-bought Naengmyeon (cold noodle) broth
- 5.5 Tbsp Ground perilla seeds
- 1/5 Cucumber
- 1/2 Hard-boiled egg
- 3 Ssammu (pickled radish wraps)
Cooking Instructions
Step 1
First, let’s prepare the toppings. Wash the fresh cucumber thoroughly and julienne it thinly. Similarly, julienne the ssammu. The hard-boiled egg, already cooked, should be cut in half for a nice presentation. These toppings will add texture and flavor to your Makguksu.
Step 2
Now, let’s make the star of the dish: the perilla seed broth. Take 100ml of store-bought naengmyeon broth. Add 4 tablespoons of finely ground perilla seeds and stir well with a spoon until thoroughly combined. It’s important to mix it smoothly to prevent lumps. Allow the nutty flavor of the perilla seeds to infuse into the broth.
Step 3
It’s time to cook the noodles. Carefully add 1 serving of buckwheat noodles to a pot of generously boiling water. Buckwheat noodles cook faster than regular noodles, so check the package instructions, but usually, about 4 minutes is perfect. Once cooked, immediately rinse them under cold water to remove excess starch, then firmly squeeze out all the water. This will ensure the noodles are firm and don’t stick together.
Step 4
Arrange the drained buckwheat noodles attractively in a serving bowl. Top with the julienned cucumber and ssammu, and the halved hard-boiled egg. Adding these colorful toppings makes the dish look even more appealing. Finally, pour the prepared nutty perilla seed broth over the noodles and toppings.
