Main Ingredients- 6 pork back ribs (approx. 1kg)
- 1/4 head of well-fermented kimchi (aged kimchi recommended)
- 1L water
- 100ml kimchi juice
Seasoning- 3 Tbsp gochugaru (Korean chili flakes)
- 3 Tbsp guk-ganjang (soup soy sauce)
- 1 Tbsp sesame oil
- 1 Tbsp sugar (adjust to kimchi’s sourness)
- 1 Tbsp fish sauce (anchovy or sand lance)
- 2 Tbsp minced garlic
- Pinch of black pepper
- 3 Tbsp gochugaru (Korean chili flakes)
- 3 Tbsp guk-ganjang (soup soy sauce)
- 1 Tbsp sesame oil
- 1 Tbsp sugar (adjust to kimchi’s sourness)
- 1 Tbsp fish sauce (anchovy or sand lance)
- 2 Tbsp minced garlic
- Pinch of black pepper
Cooking Instructions
Step 1
Properly preparing the pork back ribs is key. Soak them in cold water for 2 hours to remove any blood. It’s a good idea to change the water once or twice during this process for cleaner results.
Step 2
Once the blood is drained, place the pork back ribs in boiling water and blanch them for about 10 minutes. This step helps to eliminate impurities and any gamey odors. After blanching, rinse the ribs thoroughly under cold water and drain them well.
Step 3
Now it’s time to simmer everything to perfection. In a pressure cooker, combine the prepared pork back ribs and the kimchi, cut into bite-sized pieces. Add 1L of water, 100ml of kimchi juice, and all the seasoning ingredients (gochugaru, guk-ganjang, sesame oil, sugar, fish sauce, minced garlic, and black pepper). Stir everything together. Secure the lid of the pressure cooker. Once the valve starts to whistle, reduce the heat to medium-low and cook for 20 minutes. Using a pressure cooker will make the pork back ribs incredibly tender and soft. If using a regular pot, keep an eye on the liquid level and simmer for at least 1 hour, or until the ribs are very tender.
