First, prepare the aged kimchi. If it’s very sour, you can lightly rinse it and squeeze out the excess liquid, or use it as is – adjust based on its sourness. Slice your chosen pork (neck or belly) into bite-sized pieces, about 2-3 cm thick. Then, carefully roll each piece of pork with a portion of the aged kimchi. Rolling the pork in kimchi helps it stay intact during cooking and absorb all the delicious flavors.
