This curry is a wonderful one-dish meal that requires no other side dishes! My kids absolutely love it, so I find myself making it often. While a more elaborate version might include meat, shrimp, and tomatoes, today I’ve made a delicious curry using just the onions, scallions, and mushrooms I had in the fridge. To add a splash of color and sweetness, I also included some canned corn. Despite the simple ingredients, my husband and children praised it as truly delicious!

  • Scallions 2/3 stalk
  • Onion 1/2 medium
  • King Oyster Mushroom 1 large
  • Water 500g (approx. 2.5 cups)
  • Canned Corn a little

Cooking Instructions

Today, we’re using ‘Curry Queen’ in the Grilled Garlic & Onion flavor. This product offers a delightful balance of a smooth texture and a deep, rich taste. When you open the packet, you’ll find three components: ‘Snow Curry’, ‘Fond de Veau Base’, and ‘Spicy Spice’. Shall we begin making this delicious curry?

Heat 1-2 tablespoons of olive oil in a warmed pan. Add the finely chopped scallions and sauté over medium-low heat until fragrant, creating scallion oil. While some curries use sliced garlic, today we’ll leverage the natural sweetness of the scallions.

Once the scallions turn translucent and release a subtle sweetness, add the diced onion. Sauté the onions thoroughly until they become golden brown and their sweetness is well extracted. This step is crucial for building flavor.

When the onions are softened, add the sliced king oyster mushrooms and sauté briefly. Once the scallions, onions, and mushrooms are all tender, pour in 500g (about 2.5 cups) of water and stir in the ‘Fond de Veau Base’ powder until well dissolved.

A quick note: ‘Fond de Veau Base’ is a rich, traditional French brown sauce made by simmering roasted beef bones with sautéed vegetables, garlic, onions, and herbs. This base significantly enhances the curry’s depth of flavor.

With the base dissolved, it’s time to add the ‘Snow Curry’ powder. It comes in granular form and dissolves very easily in water. Its superior solubility compared to other curry products makes making curry much more convenient.

Once the snow curry powder is completely dissolved and the curry has thickened to your desired consistency, it’s almost ready! For the final touch, add a little bit of canned corn to introduce a vibrant yellow color and a hint of sweetness. You can adjust the spiciness using the ‘Spicy Spice’ powder, another great feature of ‘Curry Queen’. Enjoy your delicious meal!
