  • 6 Tbsp Olive oil
  • 120g Bacon, cut into bite-sized pieces
  • 6 cloves Garlic, thinly sliced or minced
  • 6 dried Red chili peppers (peperoncino), crushed (adjust to your spice preference)
  • 300g Pasta (Spaghetti or Linguine recommended)
  • Pinch of Salt (for pasta water)

Cooking Instructions

Fill a large pot with plenty of water. Add 1 tablespoon of olive oil and 1 tablespoon of salt. Bring the water to a rolling boil, preparing to cook the pasta.

Once the water is boiling, add the 300g of pasta. Gently stir the pasta to prevent it from sticking together.

Cook the pasta for about 9 minutes, which is 1-2 minutes less than the time indicated on the package. Aim for al dente – pasta that is tender but still has a slight bite. (Reserve about 1 cup of the pasta water before draining!)

While the pasta is cooking, cut the bacon into approximately 1cm thick pieces and prepare your sliced or minced garlic. Crush the dried chili peppers by hand. (You can adjust the amount for your desired level of spiciness).

In a large skillet, add the prepared bacon, garlic, and crushed red chili peppers. Start over medium-low heat and sauté, being careful not to burn the ingredients.

Once the bacon begins to render its fat and the aroma of garlic and chili peppers fills the air, pour in the remaining 5 tablespoons of olive oil. Sauté until the garlic is golden brown and fragrant.

Drain the cooked pasta and immediately add it to the skillet. Toss quickly to coat the pasta evenly with the olive oil, garlic, and bacon flavors. Adding 2-3 tablespoons of the reserved pasta water will help create a well-emulsified and moist sauce.
