Today, I’ve prepared a special ‘Apple Curry’ that will make any day feel extraordinary. I recently watched a program called ‘Gachi Funding’ where actress Ina Yoo made this apple curry, and everyone on the show raved about how delicious it was! Inspired by that, I decided to try recreating her recipe at home. The subtle sweetness of the apple combined with the deep flavor of patiently caramelized onions creates a taste that’s leagues beyond your average curry. This addictive apple curry will have you clearing your plate in no time. Shall we get cooking?
Ingredients- Curry powder mix 3/4 packet (approx. 75g)
- 2 Apples
- 4 Onions
- 2 Potatoes
- 1 Carrot
- 200g Pork loin (for curry)
- 500ml Water
Cooking Instructions
Step 1
First, let’s prepare the ‘caramelized onions,’ which are key to the curry’s depth of flavor. Take 3-4 onions, peel them, and slice them thinly. Slicing them thinly will help them caramelize evenly without burning.
Step 2
Melt 1-2 tablespoons of butter in a frying pan over medium-low heat. Once the butter is melted, add all the thinly sliced onions and begin to sauté them slowly. It’s crucial to cook them until the onions release their moisture and start to turn a golden brown color.
Step 3
I sautéed them for about 1 hour. The longer you patiently cook the onions, the more their sweetness and flavor will concentrate, resulting in a richer and more sophisticated curry taste. Remember to stir occasionally to prevent them from sticking to the pan.
Step 4
Wash the potatoes and carrot, peel them, and then cut them into bite-sized pieces suitable for curry. If the pieces are too large, they will take a long time to cook.
Step 5
Place 2 apples (peeled and cored, then roughly chopped) into a blender. Add all the caramelized onions that you patiently sautéed for an hour. Blend until smooth. The apple and onion mixture will add creaminess and sweetness to the curry.

In another pan, heat 1-2 tablespoons of cooking oil. Add the pork loin cut for curry and season lightly with salt and pepper. Sauté the pork until it’s browned on all sides. Searing the meat like this helps to lock in its juices, making it more tender.

Once the pork is cooked, pour 500ml of water into a pot. Add the chopped potatoes and carrot, along with about 2 ladles of the blended apple and caramelized onion mixture. Cover the pot and let it simmer over medium heat until all the ingredients are tender. Wait until the potatoes and carrots are soft.
Step 8
When the ingredients are well-cooked, reduce the heat to low. Add 3/4 packet of the curry powder mix. Stir well to dissolve the powder, ensuring there are no lumps. Continue to simmer, stirring gently, until the curry reaches your desired thickness. It’s important to keep stirring to prevent sticking. Simmer for about 10 to 15 more minutes, and your delicious apple curry will be ready.
Step 9
Serve the finished apple curry in a bowl. You’ll notice it has a much richer color and looks more appetizing than regular curry!
