Many traditional seaweed soups use meat for depth, but this version leverages the savory richness of tuna to create a dish that’s quick to make and packed with umami. It’s a fantastic way to enjoy a comforting and satisfying meal with a unique twist.

  • 2 Tbsp dried seaweed (cut)
  • 1 Tbsp sesame oil
  • 2 Tbsp soy sauce
  • 350ml water
  • 85g canned tuna (drained)

Begin by soaking the 2 tablespoons of dried, cut seaweed in water for about 10 minutes. Since cut seaweed rehydrates quickly, there’s no need to soak it for an extended period. You can use this time to prepare your other ingredients.

Once the seaweed is rehydrated, thoroughly wash it by squeezing it with your hands in water, creating some lather. Repeat this rinsing process about 4-5 times. This step helps to remove any slight bitterness or raw taste, ensuring a clean flavor.

After rinsing, squeeze out as much excess water from the seaweed as possible and place it into a pot. Add 1 tablespoon of sesame oil and stir-fry the seaweed over medium-high heat until fragrant. This will infuse the seaweed with a nutty aroma.

Next, add 2 tablespoons of soy sauce and continue to stir-fry for just a little longer, about 1 minute. Stir-frying with soy sauce deepens the umami flavor and helps season the seaweed evenly. Be careful not to let it burn.
