Healthy & Flavorful Soybean Paste Stew Made with Homemade Soybean Milk
This stew is incredibly easy to make with just homemade soybean milk – no complicated ingredients needed, yet it’s remarkably nutty and delicious! Store-bought soybean paste often lacks that certain depth, but this homemade version delivers a taste I personally find absolutely amazing! 😉
Main Ingredients
- Homemade Soybean Milk 150ml
- Well-fermented Kimchi 65g
- Water 150ml

Cooking Instructions
Step 1
First, prepare the well-fermented kimchi, which will add a wonderful umami flavor to the stew. Finely chop the kimchi into small pieces, about 1cm in size. Using slightly sour kimchi will result in an even richer taste.
Step 2
Heat a pot and add 1 tablespoon of nutty perilla oil. Add the chopped kimchi and sauté over medium heat. Stir-fry for about 2-3 minutes until the kimchi softens and becomes fragrant. This process mellows the acidity of the kimchi and enhances its flavor.
Step 3

Step 4
Pour about 150ml of water into the container used for the soybean milk, swirl it around to rinse out any remaining milk, and add this to the pot. This ensures you use every last drop of the precious soybean milk.
Step 5
When the kimchi and soybean milk are well combined, cover the pot with a lid and bring it to a boil over medium heat. *Be careful!* If you boil it on high heat, the soybean milk can easily stick to the bottom and burn, so always maintain medium heat. Once it starts boiling, continue to simmer for about 5 more minutes to allow the flavors to meld together.
Step 6
Your delicious Soybean Paste Stew is ready! Turn off the heat, keep the lid on, and let it rest for 5 to 10 minutes. This resting period allows the flavors to deepen and meld beautifully. Enjoy this incredibly nutty and deeply flavorful stew, made with such simple ingredients.
