  • Butter 1 Tbsp (key ingredient for rich flavor)
  • Beef sirloin 600g (the star of the curry, for tender texture)
  • 1 Onion (adds sweetness and depth)
  • 1 Sweet potato (special ingredient for sweetness and softness)
  • 1 Potato (an essential component)
  • 1 Carrot (responsible for color, texture, and nutrition)
  • Pinch of black pepper (removes gamey smell and enhances flavor)
  • Pinch of salt (balances flavor and brings out ingredient taste)
  • Water 4 cups (essential for adjusting curry consistency)
  • Dark chocolate 3-4 squares (the secret twist! provides deep flavor)

Cooking Instructions

Step 1

First, let’s prepare the onion, which will provide sweetness and aroma to the curry. Cut the onion in half, then slice it into large chunks rather than thin slices. This helps to bring out its sweetness when cooked.

Step 1

Step 2

Adding sweet potatoes to curry makes it incredibly delicious! The ones used here are orange yam, but they taste the same as regular sweet potatoes, so don’t worry. Wash one sweet potato thoroughly, then cut it into large, bite-sized cubes for easy cooking in the curry.

Step 2

Step 3

Cut the potato into large, bite-sized cubes, similar to the sweet potato. Prepare the carrot in the same way. It’s best if all vegetables are cut to a similar size so they cook evenly. Cut them into manageable pieces.

Step 3

Step 4

Melt 1 tablespoon of butter in a wide pan or pot over low heat. The buttery aroma will elevate the curry’s flavor.

Step 4

Step 5

Once the butter has melted, add the sliced onions and sauté over medium-low heat. Cooking the onions until they become translucent and develop a caramel brown color will add a deep sweetness to the curry. Be patient and cook them thoroughly!

Step 5

Step 6

When the onions are well-cooked, add the beef sirloin and sear until browned on the outside. Season lightly with salt and pepper at this stage to remove any gamey odor and to season the meat.

Step 6

Step 7

Once the beef is partially cooked, use kitchen scissors to cut it into bite-sized pieces for easier eating. This helps prevent the meat from clumping together in the curry and maintains its tender texture.

Step 7

Step 8

Now, add all the cubed sweet potato, potato, and carrot to the pan. Stir-fry them with the beef and onions for 1-2 minutes to lightly enhance their flavors. Then, pour in 4 cups of water and bring to a boil. Once boiling, reduce the heat to medium-low.

Step 8

Step 9

And here’s a secret tip for an exceptionally rich flavor! Add 3-4 squares of dark chocolate. As the chocolate melts, it deepens and enriches the curry’s taste, creating a fantastic harmony with the butter. Be sure to try this!

Step 9

Step 10

Once everything is simmering, add the 4 curry roux blocks. Break them up and stir well to ensure they dissolve without lumps. Once the curry is fully dissolved, continue to simmer over medium-low heat.

Step 10

Step 11

Stir occasionally to prevent the curry from sticking to the bottom, and let it simmer until it reaches your desired thick consistency. You’ll have a rich and thick curry.

Step 11

Step 12

Prepare a bowl of hot steamed rice, and generously ladle the piping hot Butter Beef Curry over it. For an extra treat, you can top it with a crispy tonkatsu or plump shrimp tempura according to your preference. Enjoy your delicious meal!
