Ingredients- 1 cup Viewco Coconut Milk Premium (200ml)
- 1 Tbsp Viewco Organic Extra Virgin Coconut Oil (15ml)
- 1 cup Sliced Coconut (approx. 50g)
- 2 Tbsp Sugar (30g)
- 1 bowl Rice (approx. 200g)
- 1/2 tsp Salt (approx. 2g)
- Pinch of Pepper (1/4 tsp)
Cooking Instructions
Step 1
First, preheat a pan over medium heat. Add 1 cup of sliced coconut and 2 tablespoons of sugar. Stir-fry them together for about 2-3 minutes until the coconut is lightly browned and the sugar begins to caramelize, adding a sweet and nutty flavor. Be careful not to burn it, stirring constantly.
Step 2
In the same pan, add 1 tablespoon of Viewco Organic Extra Virgin Coconut Oil. Add 1 bowl of cooked rice and stir-fry. Cook for about 1-2 minutes, allowing the rice grains to be coated with coconut oil and become slightly fluffy. This will enhance the texture of the risotto.
Step 3
Now, pour in 1 cup of Viewco Coconut Milk Premium. Stir well to combine with the rice, and simmer over medium-low heat for about 3-4 minutes, allowing the coconut milk to reduce and the rice to absorb the flavor. The risotto should thicken.
