Madeleine Batter Ingredients- 60g cake flour
- 70g unsalted butter
- 10g cocoa powder
- 50g sugar
- 1 large egg (room temperature)
- 20g milk (room temperature)
- 2g baking powder
Cooking Instructions
Step 1
In a bowl, combine the 70g of unsalted butter (at room temperature) and 50g of sugar. Place the bowl over a double boiler (a bowl set over simmering water, around 60-70°C) and stir until the butter is completely melted. Remove from the double boiler once melted.
Step 2
Prepare 1 large egg and 20g of milk, both at room temperature. Gradually add the egg to the melted butter and sugar mixture, whisking gently with a balloon whisk after each addition. Add the milk and mix well.
Step 3
Sift together 60g of cake flour, 10g of cocoa powder, and 2g of baking powder into a separate bowl. Add the sifted dry ingredients to the wet ingredients. Using a spatula, gently fold until just combined and no dry streaks remain. Be careful not to overmix, as this can make the madeleines tough.
Step 4
Lightly grease the madeleine mold with melted butter or oil. Fill each mold about 80% full with the batter. Overfilling can cause the madeleines to overflow while baking.
Step 5
Bake in a preheated oven at 180°C (350°F) for approximately 12 minutes. To check for doneness, insert a skewer into the center; it should come out clean. Baking time may vary depending on your oven.

Immediately after removing from the oven, carefully unmold the madeleines onto a wire rack and let them cool completely. Removing them while warm helps prevent them from breaking.

While the madeleines are cooling, prepare the chocolate coating. Place 50g of your chosen chocolate in a heatproof bowl. Melt it gently over a double boiler (around 50-60°C) or in the microwave in 30-second intervals, stirring in between, until completely smooth. Stirring occasionally helps prevent scorching.
Step 8
Spoon about 1 tablespoon of the melted chocolate into the bottom of each madeleine mold. This creates a neat chocolate coating at the base.
Step 9
Gently press the bottom of a completely cooled madeleine into the melted chocolate in the mold, ensuring an even coating. Place the chocolate-coated madeleines in the refrigerator for about 10 minutes to set the chocolate.
