These chocolate chip muffins are so tempting just by looking at the batter! The combination of cocoa powder and chocolate chips creates a deep, rich chocolate flavor that isn’t overly sweet. They are the most basic type of muffin, but for chocolate lovers, they are simply the best. They offer an intensely rich chocolate experience that’s delightful even when eaten with a spoon. Muffin Ingredients- 220g low-gluten flour (sifted)
- 4 Tbsp cocoa powder (sifted)
- 2 tsp baking powder
- 150g grapeseed oil (or other vegetable oil)
- 140g dark brown sugar
- 2 large eggs (room temperature)
- 120g milk (room temperature)
- 100g chocolate chips (80g for batter, 20g for topping)
Cooking Instructions
Step 1
1. In a large bowl, combine the grapeseed oil and dark brown sugar. Gradually add the sugar in 2-3 additions, whisking with a balloon whisk until the mixture becomes creamy. 2. Add the room temperature eggs and whisk well until fully incorporated and smooth. 3. In a separate bowl, whisk together the sifted low-gluten flour, cocoa powder, and baking powder. 4. Add the dry ingredients from step 3 to the wet ingredients from step 2. Pour in the sifted milk and gently mix with a whisk until just combined and no dry flour streaks remain. Be careful not to overmix, as this can result in tough muffins. 5. Fold in 80g of the chocolate chips into the batter.
Step 2
Transferring the muffin batter to a piping bag will make it easier to fill the muffin cups neatly. If you don’t have a piping bag, a large ladle or spoon will also work.
Step 3
Line a muffin tin with paper liners. Using the piping bag, fill each liner about 80% full with batter. Overfilling can cause the muffins to spill over during baking. Sprinkle the remaining 20g of chocolate chips on top of the batter for decoration.
Step 4
Bake in a preheated oven at 180°C (350°F) for 20-25 minutes. To check for doneness, insert a skewer into the center; it should come out clean. Baking time may vary depending on your oven.
Step 5
Once baked, carefully remove the muffins from the tin and place them on a wire rack to cool completely. While delicious when warm, allowing them to cool and rest for about a day will enhance the chocolate flavor even further.
