Ingredients
- 40g butter for heating (to make brown butter)
- 120g butter, softened
- 75g sugar
- 2g salt
- 2 large egg yolks
- 8g vanilla extract
- 130g cake flour, sifted
- 40g almond flour, sifted
Cooking Instructions
Step 1
First, let’s make the brown butter, which will add a deep, nutty flavor to our cookies. Place 40g of butter in a small saucepan over low heat. As the butter melts, it will start to foam. Gradually, it will turn a beautiful golden brown, releasing a rich, nutty aroma. Once it reaches your desired color and fragrance, immediately remove it from the heat and let it cool completely. Be careful not to burn it!
Step 2
Now, let’s prepare the cookie dough. In a mixing bowl, add the 120g of softened butter and cream it with a whisk until smooth and fluffy. Add the 75g of sugar and 2g of salt, and whip them together until well combined, ensuring the sugar crystals are somewhat dissolved. Next, add the 2 egg yolks and 8g of vanilla extract. Mix gently until everything is incorporated and the mixture is smooth, being careful not to let it separate.
Step 3
Pour the cooled brown butter into the bowl with the creamed butter mixture and blend again until smooth. Finally, add the sifted cake flour (130g) and almond flour (40g). Using a spatula, gently mix until just combined and no dry streaks remain. Be careful not to overmix, as this can result in tough cookies. Stop mixing as soon as the flour is incorporated.
Step 4
Transfer the dough to a piping bag fitted with your desired tip. Pipe the cookies onto a baking sheet lined with parchment paper, creating your desired shapes. Once piped, place the baking sheet in the refrigerator to chill for 20-30 minutes. This chilling step helps the cookies maintain their shape and prevents them from spreading too much during baking.
Step 5
Preheat your oven to 180°C (350°F). Bake the cookies at 180°C (350°F) for about 5 minutes, then reduce the oven temperature to 160°C (320°F) and continue baking for another 20-25 minutes. (If using a convection oven, you may need to adjust the temperature to 190°C or 375°F and shorten the baking time.) The cookies are ready when the edges are lightly golden brown and they feel firm to the touch. Remove from the oven and let them cool completely on a wire rack.
