Ingredients

  • Beef brisket (thinly sliced) 250g
  • Cooking oil
  • Onion 1/2 medium
  • Curry powder 1 packet
  • Gochugaru (Korean chili powder) 1 Tbsp
  • Water 500ml
  • Parsley flakes (for garnish)
  • Cooked rice 1 bowl

Cooking Instructions

Step 1

First, wash and peel the onion, then thinly slice it into slivers. Thinly sliced onions are key to developing a rich flavor in the curry.

Step 1

Step 2

Heat a pot over medium-low heat with a little cooking oil. Add the sliced onions and sauté them slowly until they become translucent, soft, and begin to turn a light brown color. Sautéing them for a long time like this is the secret to bringing out their natural sweetness and deep flavor.

Step 2

Step 3

Once the onions are sufficiently sautéed and releasing a sweet aroma, add the beef brisket to the pot. If the brisket slices are stuck together, gently separate them as you add them.

Step 3

Step 4

Sauté the beef brisket along with the onions, stirring to prevent clumping. Cook until all sides of the brisket are nicely browned and cooked through. This step allows the savory flavors of the beef to meld beautifully with the sweetness of the onions.

Step 4

Step 5

When the beef is almost fully cooked, add 1 tablespoon of gochugaru (Korean chili powder) and stir-fry it together with the meat and onions. Sautéing the chili powder briefly in the oil releases its spicy aroma and adds a deeper color to the curry.

Step 5

Step 6

Now, pour in 500ml of water and bring it to a rolling boil over high heat. You’ll likely see some oil rise to the surface from the beef. As it boils, use a ladle to skim off as much of this excess oil and impurities as possible. This will result in a cleaner, more delicious curry.

Step 6

Step 7

Once the water is boiling, reduce the heat to medium-low. Prepare the curry powder. To prevent lumps, it’s best to dissolve the curry powder gradually by adding a little water or broth at a time, stirring continuously, or by slowly adding the powder to the pot while whisking constantly. Continue to stir and simmer until the curry reaches your desired consistency. This creates a delicious beef brisket curry sauce.

Step 7

Step 8

Serve a generous portion of freshly cooked rice in a bowl. Ladle the rich beef brisket curry sauce over the rice. For a beautiful presentation, sprinkle a little parsley flakes on top. This beef brisket curry is wonderfully rich and flavorful, offering a sophisticated taste reminiscent of demi-glace sauce, making it a truly captivating dish.
