Rich and Sweet Pumpkin Porridge with Sweet Rice

This pumpkin porridge is made using frozen pumpkin from the freezer, with plenty of sweet rice added. You can savor the deep, natural pumpkin flavor. Thanks to the sweet rice, it boasts a more filling and smoother texture. This delicious pumpkin porridge recipe is perfect as a meal replacement for breakfast or as a delightful snack.
Ingredients- 1/2 Kabocha Squash (frozen or fresh)
- 2 Ripe Persimmons
- 1 cup Sweet Rice (Glutinous Rice)
Cooking Instructions
Step 1
Steam the kabocha squash until tender. If using frozen kabocha, thaw it first. It should be tender enough to pierce easily with a fork after about 20-30 minutes of steaming. Let the steamed squash cool slightly.
Step 2
Rinse the sweet rice thoroughly and soak it in water for at least 1 hour. Drain the soaked sweet rice in a sieve. Place the drained sweet rice in a blender with a little water and blend until smooth to create a sweet rice batter. (Add just enough water to cover the rice.)
Step 3
Once the steamed kabocha has cooled slightly, remove the skin and seeds. Place the flesh in a blender and add a small amount of water. Blend until smooth. If it’s too thick, the porridge might not cook well, so aim for a slightly thinner consistency than your desired final porridge.
Step 4
In a pot, combine the blended kabocha, the blended sweet rice batter, and a tiny pinch of salt (just to help season). Mix well. Start cooking, stirring evenly to prevent sticking to the bottom of the pot.
Step 5
Peel the persimmons, remove the seeds, and cut them into bite-sized pieces.
Step 6
Once the pumpkin porridge begins to boil, add the cut persimmons and cook together. Initially, boil over high heat. When the ingredients start to simmer and the mixture thickens into a porridge consistency, reduce the heat to low. From this point on, it is crucial to continuously stir with a ladle, scraping the bottom of the pot to prevent it from burning. Stir constantly for about 10-15 minutes until a thick and delicious pumpkin porridge is achieved.
Step 7
According to your preference, you can add sugar to adjust the sweetness or honey for a subtle sweetness. Stir well and simmer for a little longer to finish. It tastes best served warm.
