  • 2 handfuls Ripe Kimchi (approx. 300g)
  • 3 ladles Kimchi Brine (approx. 150ml)
  • 1/2 Onion
  • 1/2 Scallion (Green Onion)

Cooking Instructions

Step 1

First, thinly slice the onion. In a pot or earthenware, add the sliced onion and pork neck. Sauté over medium heat until the exterior of the pork is cooked and opaque.

Step 2

Once the pork is partially cooked, add the kimchi (chopped into bite-sized pieces) and stir-fry it with the pork. If you notice a slightly burnt aroma, add a tiny splash of water to prevent sticking and to help the kimchi release its flavors while stir-frying.

When the kimchi appears well-stirred and softened, add about 3 ladles of kimchi brine. Then, pour in enough rice water (or plain water) to generously cover the kimchi and pork. Using rice water adds a wonderfully rich and savory depth to the stew.

Now, it’s time to add the core seasonings. Stir in 1 tablespoon of gochugaru and 1 tablespoon of minced garlic, ensuring they are well dissolved into the liquid.
