  • Pork (shoulder or leg recommended) 200g
  • 1/2 stalk green onion

Seasoning & Others

  • 1/2 cup kimchi brine
  • 3-4 cups water or anchovy-kelp broth
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp soup soy sauce (optional, adjust based on kimchi’s saltiness)
  • 1/2 Tbsp minced garlic (optional, for enhanced flavor)
  • Pinch of salt (to taste)

Cooking Instructions

First, prepare the kimchi. If the kimchi head is too large, cut it into 2-3 pieces, then slice it into bite-sized pieces and add to the pot. Slicing it too thinly might reduce the chewiness, so aim for a moderate size.

Place the sliced kimchi into the pot without adding any oil. Pour in some of the kimchi brine and stir-fry. This process helps to soften the kimchi and enhance its savory flavor.

Stir-fry over medium heat for about 5-6 minutes, until the kimchi becomes slightly translucent. Be sure to stir occasionally to prevent it from burning.

Now, add 3-4 cups of water or anchovy-kelp broth to the stir-fried kimchi and bring to a boil over high heat. Adjust the amount of water based on the quantity of kimchi and desired broth consistency.
