Rich and Spicy Croaker Fish Stew from Leftover Holiday Foods
Transforming Leftover Grilled Fish and Jeon (Pancakes) into a Creamy, Flavorful Stew for Post-Holiday Meals
During the holidays, we often prepare a lot of food, including plenty of grilled fish and various types of jeon (savory pancakes). Instead of just grilling the leftover fish again, try using it to create a rich, milky broth for a hearty, spicy stew! Adding leftover jeon, like potato, sweet potato, or lotus root jeon, will make this dish even more satisfying and is a fantastic way to manage post-holiday leftovers.
Main Ingredients- 1-2 Grilled Croaker Fish (or similar white fish)
- 1-2 Leftover Potato Jeon (pancakes)
- 1-2 Leftover Sweet Potato Jeon (pancakes)
- 1-2 Leftover Lotus Root Jeon (pancakes)
- 1/4 Zucchini
- 1/4 Onion
- 1/4 Green Onion
- 1 Korean Green Chili Pepper (Cheongyang Pepper)
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Gochujang (Korean chili paste)
Cooking Instructions
Step 1
Begin by placing the leftover grilled croaker fish (1-2 pieces) into a pot. Add enough water to cover the fish. Bring it to a boil over medium-high heat and simmer for 10-20 minutes. This process will extract a milky, flavorful broth from the fish. You can enhance the richness by using the fish bones and head.
Step 2
Once the fish has released its milky broth, add your prepared vegetables: sliced zucchini, onion, green onion, and Korean green chili pepper. If you have any leftover jeon (like potato, sweet potato, or lotus root), cut them into bite-sized pieces and add them to the pot as well. The jeon will thicken the stew and add extra flavor. Add more water if needed to ensure all ingredients are submerged, and bring it back to a boil.
Step 3
As the stew begins to boil, stir in 1/2 tablespoon of gochugaru (chili flakes) and 1/2 tablespoon of gochujang (chili paste) to give it a spicy kick. Adjust the amount to your preference. Continue to simmer over medium-low heat for another 10-15 minutes, or until all the ingredients are tender. Your delicious post-holiday croaker fish stew is now ready to be enjoyed with a warm bowl of rice.
