I made Tteokguk using homemade Seolleongtang (beef bone broth). The deep and savory flavor of the Seolleongtang broth is exceptional! It has a different charm compared to meat or anchovy broths. If you don’t have Seolleongtang, you can also use store-bought beef bone broth for a delicious result. This recipe is perfect for a hearty and warm meal on a chilly day.

Main Ingredients

  • Seolleongtang broth (Beef bone broth) 4 cups
  • Tteokguk rice cakes 3 cups
  • Frozen dumplings 4 pieces

Seasoning and Garnish

  • Soup soy sauce 2 Tbsp
  • Salt 1 tsp
  • Minced garlic 1/2 Tbsp
  • Green onion 1/4 stalk (chopped)
  • Eggs 1-2
  • Seasoned seaweed (Gim) 3 sheets (crumbled)

Cooking Instructions

Step 1

First, pour the Seolleongtang broth (beef bone broth) into a pot and bring it to a boil. Once boiling, add the frozen dumplings. After the dumplings have cooked slightly, add the Tteokguk rice cakes and cook them together. Stir occasionally to prevent the rice cakes from sticking.

While the Tteokguk is cooking, prepare the egg garnish. Separate the egg yolks and whites, then cook them into thin omelets. Once cooled, thinly slice them into julienne strips.

When the Tteokguk rice cakes are soft and floating to the surface, season the soup first with soup soy sauce. Once the rice cakes are fully cooked, reduce the heat to medium and let it simmer for about 3 minutes, allowing the broth flavor to meld with the rice cakes.

Finally, add the minced garlic and chopped green onions, and simmer for a little longer. Adjust the seasoning with salt if needed. Ladle the finished Tteokguk into bowls and top with the prepared egg strips and crumbled seasoned seaweed for a delicious Seolleongtang Tteokguk!
