How to Make Pork Neck Steak Jajang Rice Bowl!
We’ve made a delicious jajang (black bean sauce) rice bowl topped with pan-fried pork neck steak. By sautéing a generous amount of onions, the black bean sauce has a deeper, richer flavor. The refreshing and crunchy cabbage salad is dressed with a zesty island dressing, and a perfectly fried egg adds a touch of elegance to this hearty meal. This dish is so good, you could easily charge $10 or even $20 for it! Everyone who tried it gave rave reviews, making me blush. It’s hard not to smile when your hard work is so appreciated!
Jajang Stir-fry Ingredients- Pork neck 400g
- Jajang powder 1.5 cups
- Cabbage 200g
- Potatoes 2 medium
- Onions 3 medium
- Carrot 1/4
- Cooking oil 2 Tbsp
- Water 5.5 cups
Pork Marinade- Salt 1 pinch
- Ground black pepper generously
Island Dressing- Mayonnaise 5 Tbsp
- Ketchup 1.5 Tbsp
- Sugar 1 tsp
- Mirin (sweet rice wine) 3 Tbsp
- Vinegar 1 Tbsp
- Pepper a little
- Salt 1 pinch
- Ground black pepper generously
Island Dressing- Mayonnaise 5 Tbsp
- Ketchup 1.5 Tbsp
- Sugar 1 tsp
- Mirin (sweet rice wine) 3 Tbsp
- Vinegar 1 Tbsp
- Pepper a little
Cooking Instructions
Step 1
First, season the pork neck with a pinch of salt and a generous amount of ground black pepper. This simple marination will enhance the steak’s flavor.
Step 2
For the salad, thinly slice the cabbage. Rinse it twice under cold water to make it crispier, then soak it in cold water for a bit. After all vegetables are prepped, drain them thoroughly in a colander to remove excess water.
Step 3
Prepare the vegetables for the jajang stir-fry. Initially, I planned for 3 potatoes and 3 onions, but decided to use only 2 potatoes as the quantity seemed a bit much. The potatoes and onions should be roughly the size of a baby’s fist.
Step 4
Julienne the onions, potatoes, and carrot for the stir-fry.
Step 5
Place the marinated pork neck into your air fryer basket. We’ll be cooking it like a steak.
Step 6
Preheat your air fryer to 200°C (390°F) and cook the pork for 10 minutes for the first round. This will start browning the exterior.
Step 7
After 10 minutes, check on the pork. It should look nicely browned and appetizing.
Step 8
Flip the pork neck and cook for another 10 minutes at 200°C (390°F). A total of 20 minutes usually ensures a juicy interior with a beautifully seared exterior. Adjust the time and temperature based on your preference for doneness.
Step 9
While the pork is cooking, prepare the jajang sauce. Mix 1.5 cups of jajang powder with 3 cups of water until smooth. Modern jajang powders dissolve easily, but pre-mixing prevents lumps and makes cooking smoother compared to dissolving it directly in boiling sauce. This step ensures a velvety smooth sauce.
Step 10
Heat 2 tablespoons of cooking oil in a deep pan or pot over medium heat. Once the oil is shimmering, add the julienned onions.
Step 11
Sauté the onions until they become translucent and slightly caramelized. Caramelizing the onions brings out their natural sweetness and deepens the flavor of the jajang sauce. (If short on time, cooking until translucent is also acceptable).
Step 12
Add the julienned potatoes and carrots to the pan with the onions and stir-fry. Cook until the edges of the potatoes begin to look slightly translucent.
Step 13
Pour in 1 cup of water and stir to combine all the ingredients.
Step 14
Let it simmer over medium-low heat until the potatoes are tender but still slightly firm (‘al dente’). Covering the pot will help the potatoes cook more evenly.
Step 15
Once the potatoes are nearly cooked, pour in the pre-mixed jajang sauce. Stir continuously and bring to a simmer. Check the consistency; if it’s too thick, add about 1.5 cups more water until you reach your desired thickness. Keep stirring to prevent sticking to the bottom, and let it simmer for a few minutes to thicken slightly. Your delicious jajang stir-fry is ready!

Check on the pork steak from the air fryer. It should be beautifully browned. If you prefer less crispy pork, reduce the temperature or cooking time.

Prepare the salad dressing and a fried egg. In a bowl, combine all the Island Dressing ingredients: 5 Tbsp mayonnaise, 1.5 Tbsp ketchup, 1 tsp sugar, 3 Tbsp mirin, 1 Tbsp vinegar, and a pinch of pepper. Mix well. Separately, fry an egg to your liking.

Serve the rice in a bowl, top it generously with the jajang stir-fry, and place the perfectly cooked pork neck steak alongside.
