Jajang Stir-fry Ingredients

  • Cabbage 200g
  • Potatoes 2 medium
  • Onions 3 medium

  • Cooking oil 2 Tbsp
  • Water 5.5 cups

Pork Marinade

  • Salt 1 pinch
  • Ground black pepper generously

Island Dressing

  • Mayonnaise 5 Tbsp
  • Ketchup 1.5 Tbsp
  • Sugar 1 tsp
  • Mirin (sweet rice wine) 3 Tbsp
  • Vinegar 1 Tbsp
  • Pepper a little

Cooking Instructions

Step 1

First, season the pork neck with a pinch of salt and a generous amount of ground black pepper. This simple marination will enhance the steak’s flavor.

For the salad, thinly slice the cabbage. Rinse it twice under cold water to make it crispier, then soak it in cold water for a bit. After all vegetables are prepped, drain them thoroughly in a colander to remove excess water.

Prepare the vegetables for the jajang stir-fry. Initially, I planned for 3 potatoes and 3 onions, but decided to use only 2 potatoes as the quantity seemed a bit much. The potatoes and onions should be roughly the size of a baby’s fist.

Julienne the onions, potatoes, and carrot for the stir-fry.

Place the marinated pork neck into your air fryer basket. We’ll be cooking it like a steak.

Preheat your air fryer to 200°C (390°F) and cook the pork for 10 minutes for the first round. This will start browning the exterior.

Let it simmer over medium-low heat until the potatoes are tender but still slightly firm (‘al dente’). Covering the pot will help the potatoes cook more evenly.

Once the potatoes are nearly cooked, pour in the pre-mixed jajang sauce. Stir continuously and bring to a simmer. Check the consistency; if it’s too thick, add about 1.5 cups more water until you reach your desired thickness. Keep stirring to prevent sticking to the bottom, and let it simmer for a few minutes to thicken slightly. Your delicious jajang stir-fry is ready!
