  • 0.5 Tbsp Gochujang (Korean chili paste)
  • 0.5 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Minced Garlic

Cooking Instructions

Step 1

Let’s start making the ultimate savory Beef Brisket Doenjang Jjigae! Prepare for your appetite to be stimulated right from the beginning!

Step 1

Step 2

First, chop all the vegetables into bite-sized pieces. It’s best to julienne the radish thinly, but not too thin, so it doesn’t become mushy when cooked. While it will still be delicious if it softens, a slight bite is preferable for texture! Cut the zucchini, onion, and potato into manageable chunks. Dice the tofu. Slice the green onion and Cheongyang pepper diagonally. Prepare the mushrooms as needed.

Step 2

Step 3

Now, without preheating the pot, add the beef brisket and stir-fry over medium heat. Once the brisket is lightly cooked, add the julienned radish and stir-fry together. If the brisket starts sticking to the bottom, don’t panic! Add the radish, and as it cooks, its moisture will help prevent sticking. Stir-frying the radish in the beef brisket fat will infuse it with a richer flavor.

Step 3

Step 4

Once the beef brisket and radish have released some fat and are nicely sautéed, pour in 500ml of the prepared rice water. Using rice water makes the doenjang jjigae creamier and more flavorful.

Step 4

Step 5

Once the rice water comes to a boil, add the potatoes and onions first, as they are denser vegetables. Let it simmer over medium heat until the potatoes are tender.

Step 5

Step 6

As the stew boils, make sure to skim off any impurities or foam that rise to the surface. This step is crucial for a clean, clear broth that allows the true flavor of the doenjang to shine through.

Step 6

Step 7

Let’s prepare the seasoning paste! In a small bowl, combine 1.5 Tbsp of doenjang and 0.5 Tbsp of gochujang. Whisk them together until smooth and well combined, ensuring there are no lumps. This ensures an even flavor distribution in the jjigae.

Step 7

Step 8

When the broth is boiling and the potatoes are somewhat cooked, add the prepared seasoning paste and 1 Tbsp of minced garlic. Next, add the zucchini, tofu, and the prepared mushrooms. Continue to simmer for a few more minutes.

Step 8

Step 9

Now, add 0.5 Tbsp of gochugaru (Korean chili flakes) to add a touch of spice and stir well. Gochugaru is optional, so feel free to adjust the amount according to your preference for heat. Let it simmer for another 2-3 minutes, allowing the ingredients to meld with the flavors.

Step 9

Step 10

Finally, add the diagonally sliced green onions and Cheongyang peppers. Top with enoki mushrooms or your favorite mushrooms, simmer for a final moment, and your delicious Beef Brisket Doenjang Jjigae is complete! Enjoy it with a hot bowl of rice!
