Ingredients
  • 300ml Beef bone marrow broth (store-bought or homemade)
  • 1 medium Potato
  • 1/4 medium Zucchini
  • 1/4 medium Onion
  • 1/4 block Firm tofu
  • 2 Shiitake mushrooms
  • 2 Korean chili peppers (Gochu)
  • 2 stalks Green onion
  • 1 Tbsp Soybean paste (Doenjang)
  • 0.5 Tbsp Red pepper powder (Gochugaru)

Cooking Instructions

Step 1

First, wash and prepare all the vegetables. Slice the potato, zucchini, and onion into thin, bite-sized pieces. Remove the stems from the shiitake mushrooms and slice them thinly. Dice the tofu into 1.5cm cubes. Thinly slice the Korean chili peppers and green onions diagonally.

Step 2

Pour 300ml of beef bone marrow broth into a pot and bring it to a boil over high heat. If you don’t have beef bone marrow broth, you can substitute it with anchovy-kelp broth, but using bone marrow broth will provide a much richer and deeper flavor.

Step 3

Once the broth is boiling vigorously, add 1 tablespoon of soybean paste and stir well to dissolve it completely, ensuring there are no lumps.

Step 4

As the broth with the dissolved soybean paste comes back to a boil, gently skim off any foam that rises to the surface with a spoon. This step helps to keep the stew clean and the flavors pure. Be careful not to let it boil over.

Step 5

When the broth is boiling again, add the sliced potatoes, zucchini, onion, and shiitake mushrooms. Reduce the heat to medium and cook until the vegetables are tender. You can check if the potatoes are cooked by piercing them with a chopstick.

Step 6

Once the vegetables are tender, add the diced tofu, sliced green onions, and Korean chili peppers. Continue to simmer for a few more minutes. Stir gently to prevent the tofu from breaking apart.

Step 7

Finally, add 0.5 tablespoon of red pepper powder to add a subtle spicy kick. You can adjust the amount of red pepper powder to your preference.

Step 8

Stir everything together gently and simmer for another 1-2 minutes, allowing all the flavors to meld beautifully. Your rich and hearty beef bone marrow soybean paste stew is now complete!

Step 9

Serve hot and enjoy with a bowl of freshly cooked rice! It’s especially delicious spooned over warm rice.
