An Easy Recipe for Tteok Mandu Guk Using Flavorful Beef Bone Broth
This is the perfect recipe for when you’re craving a warm and satisfying soup. It’s especially convenient because you can make it easily using pre-made beef bone broth, infusing it with a deep, rich flavor.
Main Ingredients- 400g Tteokguk rice cakes
- 4 meat dumplings
- 500g commercial beef bone broth
- 200g beef brisket (or shank)
- 2 eggs
- 1/2 stalk green onion
Seasonings & Other Ingredients- 1 Tbsp tuna extract
- 1 Tbsp soup soy sauce
- Pinch of salt
- 3 cloves garlic, minced (approx. 1 Tbsp)

Cooking Instructions
Step 1
Rinse the tteokguk rice cakes under running water 2-3 times and drain them. Soak the rinsed rice cakes in cold water for about 30 minutes. This soaking process will make the rice cakes soft and chewy, enhancing their texture.
Step 2
Pat the beef brisket (or shank) dry with paper towels to remove any excess blood. Removing the blood will ensure a clearer and cleaner tasting broth.
Step 3
Slice the beef into bite-sized pieces, cutting against the grain. Slicing against the grain makes the meat more tender and enjoyable to eat.

Cut the beef pieces to about the size of your knuckle. This size is good for even cooking and a pleasant chew.

In a pot, add the sliced beef and drizzle with 1 tablespoon of sesame oil.

Add 3 cloves of minced garlic (about 1 tablespoon). The garlic will infuse the beef with its aromatic flavor as it cooks.

For the egg garnish, beat 2 eggs and cook them into thin omelets. Use low heat and a lightly oiled pan to prevent burning and create beautiful, thin egg crepes.
