Using popular Japanese solid curry blocks, you can create a restaurant-quality, premium beef curry right in your own kitchen. The tender beef combined with the rich curry flavor will make for a delightful meal for the whole family.

Curry Ingredients

  • Japanese Vermont Curry (Golden Curry or other varieties are also fine) 1 box
  • Beef (chuck roll or other suitable cut for curry) 300g
  • Potatoes (medium-sized) 2 pcs
  • Onions (medium-sized) 1.5 pcs
  • Carrots (medium-sized) 1 pc
  • Spaghetti Tomato Sauce 2 Tbsp
  • Milk 200ml
  • Water 800ml

Cooking Instructions

Step 1

First, prepare the vegetables and beef that will determine the curry’s flavor. Roughly chop or dice the onions, and cut the potatoes and carrots into large chunks. It’s important to cut the potatoes large so they don’t turn mushy while cooking, ensuring a pleasant texture. Cut the beef into bite-sized, generous pieces.

Melt 2 pieces of butter in a wide pot. Add the seasoned beef and sear it to a medium doneness. The key is to sear only the outside of the beef to lock in the juices. Be careful not to overcook, as it can become tough when added to the curry.

Temporarily remove the medium-seared beef to a plate. Using the same pot with the remaining beef drippings and flavor, add the large chunks of potatoes and carrots. Sauté over medium-low heat until well-cooked. The ingredients will be coated in oil, enhancing their sweetness and flavor.

Once the edges of the potatoes and carrots appear slightly translucent, add the roughly chopped onions and sauté together. Continue to sauté until the onions become translucent and release a sweet aroma; this will deepen the curry’s flavor.

Pour 800ml of water into the sautéed vegetables, and return the beef to the pot. Bring to a rolling boil over high heat to allow the ingredients to meld together.

Once the water boils, reduce the heat to medium-low and add the Japanese Vermont Curry solid curry blocks. (Please refer to your curry product’s instructions for the exact amount. Typically, a box contains around 12 blocks, and 6 blocks are suitable for 800ml of water.) While I personally prefer the flavor of Vermont Curry, other brands of solid curry are also fine. Break apart the curry blocks as you add them to ensure they dissolve well.

When the curry blocks have completely dissolved, stir in 2 tablespoons of spaghetti tomato sauce for added depth of flavor. Tomato sauce enhances the umami of the curry, providing a richer and more sophisticated taste. Then, simmer uncovered over medium heat for about 20 minutes. It’s crucial to stir occasionally to prevent sticking to the bottom.

Finally, add 200ml of milk for extra creaminess and richness. Continue to stir constantly to prevent burning or sticking, and simmer for another 10 minutes. Your delicious beef curry is now complete! Serve generously over warm rice and enjoy.
