This recipe creates a deeply savory beef broth perfect for your baby’s mid-stage purees. We’re adding vegetables to enhance the umami, making it extra delicious! Many of us struggled to sleep through the recent heatwave, didn’t we? Yes, it was incredibly hot! By morning, things felt a bit cooler, so after sending everyone off and quickly cleaning up, I decided to prepare some baby food. Making baby food broth can be quite challenging on such hot days, but making a generous batch at once is so convenient for later use. Following our previous recipe for plain beef broth, today we’re adding vegetables for an even richer and more flavorful beef broth. This broth will add a wonderful depth of flavor to your baby’s meals.

Ingredients

  • 300g Fresh Beef (for soup)
  • 1 stalk Green Onion (white parts mainly)
  • 1 medium Onion
  • 1/5 Radish (approx. 100g)
  • 4 Dried Shiitake Mushrooms
  • 3L Cold Water

Cooking Instructions

To ensure a delicious broth free from gamey odors, it’s crucial to thoroughly drain the blood from the beef. Soak the beef in cold water for at least 1 hour, changing the water once or twice if possible, to remove as much blood as you can.

Place the drained beef into a pot and cover it with cold water. Bring it to a boil over high heat. Once it starts to boil, carefully skim off any foam or impurities that rise to the surface. This step will help make your broth clearer and cleaner.

After removing the foam, add all the prepared ingredients: green onion, onion, radish, and dried shiitake mushrooms. Reduce the heat to medium-low, cover the pot, and let it simmer gently for about 1 hour. Allowing ample time ensures that the flavors and aromas of the vegetables and beef fully infuse into the broth.

Preparing the vegetables is simple! Cut the radish into about 3 large pieces and halve the onion. Roughly chop the green onion as well. Using dried shiitake mushrooms is beneficial as they contain more Vitamin D than fresh ones, making them excellent for broths. They also add a lovely aromatic touch.

After simmering gently for an hour, the broth will have a rich, deep color. Tasting a spoonful reveals the savory beef flavor complemented by the subtle sweetness of the onion and the refreshing taste of the radish. Remove all the vegetables from the pot. Let the beef cool slightly, then gently blot away any surface fat with a paper towel. Removing fat is important for a clean-tasting baby food. Once the fat is removed, finely mince the beef into small pieces suitable for your baby.

It’s very convenient to store the finished beef broth in the freezer for later use. You can use store-bought broth bags, or like me, utilize large milk storage bags. Portion the broth and the finely minced beef into your chosen bags or containers. Alternatively, freezing portions in baby food cube trays allows for easy retrieval of the exact amount needed for each meal.

Storing the minced beef together with the broth helps prevent the beef from drying out on the surface, keeping it fresh. I personally divided the broth using two different methods for convenience. Refrigerate or freeze as needed, and enjoy using this delicious beef broth in your baby’s homemade meals!
