Today, I’m sharing a recipe for Pork Rib Soup (Dwaeji Galbitang) with a broth so incredibly delicious, it’ll make you forget all other soups! This dish was even featured on the popular cooking show ‘Homegrown Baek’. Every component, from the tender meat to the refreshing and deep broth, is absolutely perfect. We’re using budget-friendly pork ribs to make this incredibly satisfying and cost-effective. Pork Rib Soup Ingredients
- Pork ribs 800g
- Soju 1/3 cup (for removing odor)
- Minced garlic 4 Tbsp
- Black pepper, generous pinch
- Sugar 1/2 Tbsp
- Salt 1 Tbsp
- Oyster sauce 1 Tbsp
Dipping Sauce
- Sugar 1/3 Tbsp
- Soy sauce 2 Tbsp
- Anchovy sauce 1 Tbsp

Cooking Instructions
Step 1
First, soak the 800g of pork ribs in cold water for 1 hour to remove any blood. Soaking thoroughly ensures a clear broth free from unpleasant odors. It’s beneficial to change the water once during this process.
Step 2
After soaking, place the ribs in boiling water and blanch them for about 5 minutes. To further eliminate any gamey smell, add 1/3 cup of soju to the boiling water.
Step 3
Rinse the blanched ribs under running water to remove any impurities, then place them back into a clean pot. Add 4 tablespoons of minced garlic and a generous pinch of black pepper to season the ribs.
Step 4
Pour in 600ml of water, enough to cover the ribs. Add 1/2 tablespoon of sugar, 1 tablespoon of salt, and 1 tablespoon of oyster sauce. Bring to a boil over high heat and simmer for about 10 minutes to allow the flavors to meld.
Step 5
After 10 minutes, add another 1.5 liters of water and bring it to a boil. Then, reduce the heat to medium, cover the pot, and let it simmer gently for 1 hour until the ribs are tender and falling off the bone.

Once the soup has simmered for an hour, taste the broth and adjust the seasoning to your preference. If it’s too salty, add a little more water. If it’s too bland, add more salt. If you detect any lingering gamey smell, a splash of cooking wine (like mirin or sake) can help refine the broth’s flavor.

Finally, let’s prepare a delicious dipping sauce to enjoy with the ribs! In a small bowl, combine 1/3 tablespoon of sugar, 2 tablespoons of soy sauce, and 1 tablespoon of anchovy sauce. Stir well, then add finely chopped green onions and, if desired, finely chopped Cheongyang chili peppers for a spicy and sweet condiment.
