Cooking Instructions
Step 1
First, let’s prepare the star ingredient for your Dak Gomtang: the chicken. Get 1kg of fresh, refrigerated chicken cut for stir-fry. The freshness of the chicken is crucial for the final taste of the soup, so choose a high-quality bird.
Step 2
Rinse the chicken thoroughly under cold water 2-3 times to remove any impurities. Carefully trim away the skin and visible fat from all parts of the chicken, except for the legs. This step is key to achieving a lean and clear broth.
Step 3
Now, let’s start building the broth. Place the prepared chicken in a large pot and cover it completely with water. Add the 10 whole cloves of garlic (or 1 tablespoon of minced garlic if whole cloves aren’t available) and 1 teaspoon of black pepper. Bring to a boil over high heat and simmer for 20 minutes. This initial boil helps to draw out impurities and begin flavor development. The garlic will help to remove any gamey odor and add depth.
Step 4
Next, we’ll refine the broth for a richer, clearer soup. Carefully remove the chicken breast and any tougher meat parts. Let them cool slightly, then shred the meat from the bones. Do not discard the bones; they contribute significantly to the broth’s flavor and nutrients. While the soup is simmering, continuously skim off any foam or impurities that rise to the surface to keep the broth clear. Continue to boil over high heat for another 20 minutes until a milky, rich broth develops. Finally, season with salt and pepper to your taste.
Step 5
Prepare a bowl of warm, cooked rice.
Step 6
It’s time to serve! Ladle the shredded chicken meat and the rich, clear broth generously over the rice in the bowl. Garnish with fresh, chopped chives and green onions for a burst of freshness and color. Adjust the seasoning with additional salt and pepper if needed, and enjoy your delicious homemade Dak Gomtang!
