On hot days, we tend to crave cold foods, but eating too much cold food can lead to stomach upset. That’s why today, I’m making a warm and hearty soup: Beef and Seaweed Soup! It’s been a while since I made it, and it tastes absolutely wonderful.

Ingredients

  • 200g beef (for soup), cut into bite-sized pieces
  • 2.5 cups dried seaweed (already cut), rehydrated
  • 1.5 Tbsp perilla oil (deulgireum)
  • 4 Tbsp fish sauce or soy sauce for soup

Cooking Instructions

Step 1

First, prepare 200g of beef cut for soup. Pat the beef dry with paper towels to remove any excess blood. This step is crucial for a cleaner-tasting broth. Cut the beef into manageable, bite-sized pieces.

Heat a pot over medium heat and add 1.5 tablespoons of perilla oil. Add the prepared beef and stir-fry until the surface is browned. Sautéing the beef well will enhance its flavor and aroma.

Now, let’s prepare the seaweed. Rinse 2.5 cups of dried seaweed thoroughly under running water to remove any salt. Cut it into easy-to-eat pieces. You don’t need to soak it beforehand, as it will soften as it cooks.

Add the prepared seaweed to the pot with the sautéed beef. Stir-fry together for about 1-2 minutes. This step helps to eliminate any potential fishy smell from the seaweed and adds a nutty flavor.

Pour in enough water that has been infused with dried kelp (dashima) to cover the ingredients. Bring the soup to a rolling boil over high heat. Miyeokguk truly shines when simmered for a long time, allowing the flavors to meld beautifully. Let it boil for about 15-20 minutes.

As the soup boils, skim off any foam that rises to the surface with a spoon. This will make the broth much clearer and cleaner in taste. Finally, season with 4 tablespoons of fish sauce or soup soy sauce to your liking. You can add a little minced garlic at this stage if you prefer, but the soup is also delicious without it. Enjoy your hearty meal!
